What you call kaju we call it kaju badam...what you call pesta we call it pesta badam.. What you call almond we call it kath badam....we call all of them badam but they have specific names..

that round samosa is actually called 'Shingara' which has potato staffing inside it. In Bangladesh samosas are also popular which are triangular shaped and contains onion and some other staffing.
We don't use Milk Powder. Our chef who is well known in the Old Dhaka community and many, always uses liquid milk. Even at home we use pure Milk. And our chef Hazi Fazlur Rehman uses only Saffron in Biryani. Because, saffron has it's own flavor. And yes, we also don't use aloo. Just meat, fresh masala, dry fruits & saffron.

Yahya bhai, a couple of things worth pointing out. Firstly, Kolkata biryani is a pakki biryani and not a kachchi one. Secondly, equating burhani with raita is a bit inaccurate tbh. Raita is a dip while burhani is a drink. The correct Indian equivalent of burhani is ghol which is popular in Kolkata. It is served in muslim weddings in Kolkata and it is also a curd based drink just like burhani. The only difference being in Kolkata, tomato ketchup is not used to make it unlike in bangaldesh.
