For those who are saying that the deer did see the tiger - Deers cant see the tigers colors. Their visual range is much lower than humans. Also, the tiger camouflages well with his surrounding. So what's happening is that the deer is seeing green hues and a dense green color (the tiger). So unless the tiger starts running towards them they cant see him.
This is also why deer's pair up with monkeys. Monkeys have same color range as us so they can spot the tiger easily.
This narrator did not explain it but David Attenborough did explain this phenomenon in a similar tiger-deer hunt video where deer's paired with monkeys.

I don't think they are going extinct primarily because of poachers. I believe most big cats are going extinct due to genetic issues and failures to reproduce, if I'm not mistaken.

As a note from someone who's been in the woods quite a bit, it's way harder to hear or see an approaching animal than you may guess. Unless you step on a twig, it's very easy to sneak up on someone else. And it's difficult to make out animal shapes unless you catch them in motion. The forest foliage obscures vision well.

That noise is the alarm call of the spotted deer in Sariska. The adults made it after spotting the tiger charge at the fawn. The caneraman caught one of the deer hooting at 3:15. Does sound like a troupe of monkeys though.

As the narrator said, there are many more eyes to avoid as they could alert the rest of the herd.
However, it is a target rich environment. The predator doesn't need to kill every deer; only enough to sustain itself.

He also waits until the soul has left the body before starting to eat it. There's no pride in killing other animals but he knows he has to in order for him to survive.

I went on a safari recently and the guides track the tiger moments using the deer calls. You got to have a really sharp ear to hear those calls. It helps locate the tigers.
