    Thank you and your Mother for sharing this recipe. I made this recipe a few times now and it is always delicious. It has changed the way that I have preciously made it. Although it is time consuming, Its worth it . The hardest part is waiting to eat it, LOL.

    It was my job to fry the smeltzes, and make egg plant parm for Christmas Eve. and if you're Italian you know how important Christmas Eve is. It will be interesting to compare recipes.

    I hated eggplant too. Then as I got older I love it. I’m from Naples also. You’re right no bread crumbs. I needed a good recipe for eggplant and now I have one. Thanks so much

    That looks delicious, like you I dont breadcrumb my eggplant either. Also, I grew up in Brooklyn and under the L near 86th Street was the original John's Deli, and he would make the chicken parm sandwich topped with the eggplant parm. Good stuff!

      Me 2 eggplant since I was 5 y.o. though I do like it lightly bread crumbs. Just used to it that way.

    Gsve you a thumbs up but I'll never make this stuff. I cannot stand eggplant. But i may try it for wome other parm! GREAT TO MEET "MA" seems a wonderful woman!

      Geez I’m third generation NY Sicilian. My Grandmother and Aunts and German mother all are rolling over in there Graves. French Chefs “ ONLY” wouldn’t use Italian flavored bread crumbs. My Aunt from Massapequa won at least 20 Blue Ribbons at Italian Festivals in Nassau County, and if your truly and Italian you go to your local Italian Neighborhood Grocery/Deli and buy only Whole Milk Mozzarella and slice it NEVER Grocery Store Bought Bagged Cheese. You are a DISGRACE To True Sicilian Italians. I use to cook for a very famous Italian near Atlantic Beach, I’d have been swimming with the Fishes if I served him FRENCH STYLE Eggplant Ala Parmigiana

    It just hit me, I'm going to make this for supper tonight, but with rabbit. I have 3 thawed right now in the fridge! I'll make it exactly the same with the exception of substituting rabbit for the eggplant. I'll let you know how it turns out.
