      My hometown krub. I live here for decades and still be. Regarding your Thai just tell the vendor "Mai Ped" (ไม่เผ็ด = no spicy). Don't said "Ped Noi". Unlike English, Thai is a tonal language, and the level of spiciness between Ped Noi (เผ็ดน้อย) which means not so spicy and เผ็ดหน่อย (In English is the same -- Ped Noi, but in Thai is the different tone) which mean more spicy than average is different. Big difference. You might end up with a very spicy dish if the seller couldn't understand what you really mean.

    One of my favourite purchases when going to Thailand, was the julienne peeler!! Never seen them in Canada, so I bought one for everyone in my family too hahaha, love using it :)

    Thank you! I love that you have recipes that are veg-friendly or veg-capable. What I'd like to know is if there is a way to make no-fish sauce or mushroom soy sauce with wheat-free soy sauce. Being vegan is easy, being gluten-free is... not.

    Made this 2 nights ago and it was absolutely delicious . I followed the recipe exactly but made extra. As it stands, the recipe does not feed 4 people unless you are talking about 4 children or 4 midgets. It serves 2 ! I'll definitely be making it again.

    this looks and the same exact recipe as filipino “pancit”. we also have a dish call mi soa in the philippines but it has a kind of soup, sauce or gravy :)

      We call "Kin Jay " in Thai or The Nine Emperor Gods Festival. It is a native of Thai Chinese festival.
      Beginning on the eve of 9th lunar month of the Chinese calendar.

    Did you use dried mushrooms because you don't have fresh available, or is there a taste difference between rehydrated and fresh?

      To me, the dried ones are more aromatic.

    We have misua noodles in the Philippines too! But they are much thinner. I wonder what the original Chinese noodle was if the word was borrowed from them. 🤔

    Pailin, I used a fast cook stove connected to a propane with higher pressure regular for stir fry. Mainly, not to save time but keep vegetable crispy, green, tastier and yet cooked. Any comment? I Know this setting is not easily available to most of viewers in the kitchen except some viewers with backyard BBQ setting to convert.

    Dear Pai, You seem to have a very well rounded knowledge of most things food related. My Boyfriend loves Mushrooms, I personally do not like them, but because I love him very much, each time he gets a new type of mushroom he knows I haven't had, I try it just for him. I know the reason I don't like mushrooms is because of the texture they have when cooked. No matter where I go, how they are cooked, etc, they always have a nasty rubbery texture. Do you know of any that don't have that rubbery texture when cooked?
