  • The Original Blue Hawaii was invented by Harry Yee, the legendary head bartender at the Hilton Hawaiian Village in Waikiki in Honolulu on the island of O'ahu, Hawaii. This drink, is a wonderfully pared down reconstruction of that original drink, stripping out the citrus and keeping the base elements of the recipe. On paper this drink doesn't work...it seems to break some fundamental rules, but once you taste it, oh boy does it ever! I didn't conduct a postmortem on this drink, as writing this now I wish I had, because in a word, it is brilliant. This reconstruction comes to us from NYC Barman John de Bary, who was lucky enough to land at the legendary bar PDT before he knew which end was up and went on to run the cocktail programs for the restaurant that counted Momofoku in it's Arsenal. This drink is very much worth your consideration. Hope you guys go and make it. And yes you can use MALIBU if you want.

    I love seeing “disco drinks” or “club cocktails” improved, while still staying faithful to the original and without losing the heart of it! This looks great, I think I'll add some lime juice in the spirit of the original recipe, like you suggested.

    Got a bottle of blue curacao around 10 days ago and I already used half of it. Been doing blue drinks almost every night and all of them are amazing! Blue Hawaii, Blue Hawaiian, Blue Lady, Blue Lagoon, Cactus Jack, Bikini Martini, Swimming Pool and I'm probably forgetting so so many!

      Despite my enjoyment of blue drinks I tend to use my pierre ferand curacao more than blue curacao. I like the taste better. But this twist on the blue hawaii looks great.

      @@BOYVIRGO666 sure Pierre Ferrand is amazing, no doubts. But for the blue curacao I believe it depends from what are you buying. Briottet, Giffard and Marie Brizard are top quality. It's obvious if you go for Bols or DeKuyper the quality will be inferior.

    Don Lee was my instructor for BarSmarts when I did my final test. He gave me great advice that I use to this day. Wish I could advance my bartending career now but it’s tough in Covid times

    Fabulous formula of ingredients. I love trying different drinks. And this blue drink is actually very sophisticated. I am glad you have rounded yourself to be open to blue drinks. I do not have this blue liqueur, but am interested in it.

    If you only knew what a service you did to those of us with Asperger's with your opening history. You answer a lot of questions I'd always have associated with the drink every time I made, ordered or saw one.
    Although a lot of the time I just want a video that shows the hardcore practical information, I can also always skip to that in your video as well. The history is something I would have to search down when I reached a point I couldn't stand the questions anymore.

    Made this today, but used a rectified pineapple juice: 9 grams citric acid per 100ml pineapple. Really gave it a nice sour balance.

    since you seem to get more into coconut liqueur, check out koko kanu if it's available in your area. it's higher proof jamaican rum with coconut and a really good quality product :)

    Really want to try this with Koloa Kaua'i coconut rum, which is from a rum distillery on Kaua'i. It's 40%, so it'd probably make for an even drier result.

    I have heard you before not being too fond of Malibu coconut rum but I need to mention it is the most popular coconut flavored brand out there!
    Currently I am in France and they have lots of Clement products. Never seen the coconut variety but now I feel challenged! Looks like a wonderful drink so should be tested!

      I have never been a fan of coconut liqueur at all it usually tastes like Suntan lotion to me, buuuuuuuuut I must admit the Clement is very good

    It seems like this would be a blue Hawaiian, coconut liquor instead of cream of coconut. Doesn’t the blue Hawaii have vodka and lime in it?

      Yep these two are always confused, Blue Hawaii Vodka, no coconut. Blue Hawaiian Rum and cream of coconut.

    I tried this tonight and didn't enjoy it. It was a bit too sweet for my taste and I think the citrus would have helped balanced it out better. The blue color did attract me to try it out though haha

    Hey Leandro, so i have a original tiki cocktail idea for you that maybe youd like to try out :)
    Im an amateur home mixologist and been watching you for a bit now and learned alot! So i thought id reach out! So this is my tiki inspired drink called Tango Alpha Tango. However, unfortunately i dont have access to awide selection of rums from around the world so ive just been using Bacardi and Havana Club equal parts :/ so if your interested i was hoping maybe you could pair a good mix of different rums, like a Smith & Cross or Plantation or others, for my cocktail?
    Tango Alpha Tango
    1oz Lemon
    .5oz Coconut Cream
    .5oz Tangerine oleo-saccharum syrup
    1oz Tangerine juice
    1oz Pineapple
    3 dashes Peychaud's bitters
    1 dash Angostura bitters
    2oz mix of rums
    Whip shake
    Served over Pebble ice
    Garnish*

    Great video, as always, that drink looks tasty. But i was wondering, isn't a this reconstruction of the Blue Hawaiian and not of the Blue Hawaii? They are similar, but the Blue Hawaii doesn't contain coconut, if i'm not mistaken🤔

    its honestly incredible that the drink didnt come out too sweet. i dont think ive ever seen a shaken cocktail without any citrus component before

      It’s what drew me to it, there is a little tartness from the pineapple but yeah, pretty great. I scoffed when I saw the recipe initially

      Yeah, they are so often confused or seen as the same thing. There is a difference. A Blue Hawaiian is basically a Pina Colada with blue curacao.

    I do believe that the original Blue Hawaii didn't have any coconut of any kind, but did have a sweet and sour mix of lemon, lime and sugar. What you've made seems to be a riff on the Blue Hawaiian, which is a slightly different cocktail.

    I used 1oz specs with: bacardi carta blanca, fresh pineapple juice, dekuyper blue curçao, and malibu coconut rum because I already owned them. Not bad.
    Added 1/2oz lime juice, much better.

    Is there any other difference between curaçao and blue curaçao other than blue-ness? Can you just take curaçao and add some blue spirulina?

      It tastes about the same as the regular Curaçao but it will probably be hard to get that bright blue color.

    fresh pineapple is plenty acidic. maybe if you used canned pineapple juice you might need a quarter ounce of lime. a bit of salt probably wouldn't go wrong

      Nah, blue Hawaiian has cream of coconut/coconut cream so the texture would be totally different

    Is the difference between blue curaçao and dry curaçao just the color?

      I belive technically the difference should just be the colour, but for me the blue Curaçao (Bols) smells and tastes a little like those sweet kids bubble gum (probably a bad comparison, and I probably just imagine the difference because of the colour, but that's the first thing that came to my mind when I smelled it 😅).

      Yes, technically the only difference is food colouring, but most cheap blue curaçaos include a lot of sugar and stuff. There's high quality blue curaçaos too, but if you can't find one, get a clear curaçao and add food colouring yourself. If you get an orange curaçao you'll just mix up a murky brown.

      The only difference should be the color. The Giffard is a great Blue Curaçao though. Never hurts to have some Blue in your collection for that cocktail every now and then...

    I dont agree that Plantation 3 Star is a white rum. Ok... color almost white but white rums as mostly understood as non-aged, no barrel-contact ones. Plantatios 3 Star contains aged rum thos not clear white rum. And taste profile is more complex than standard white rum.

    Too sweet for me. I prefer 1 part of Blue Curacao, 2 parts of Coconut Liqueur, 2 parts of Pineapple Juice, 3 parts of White Rum. A little less Blue Curacao, a little more White Rum and it becomes perfect

      Interesting. I'm sure some might be dissapointed to receive a drink with coconut when they order a blue Hawaii, that being the main difference. I personally love coconut though so I wouldn't mind either way

    Thats a Blue Hawaiian cocktail. A blue Hawaii is made with vodka.

      The creator of the cocktail called it a Blue Hawaii, so we'll refer to it as that. But yes, the original Blue Hawaii had white rum, vodka, blue curacao, pineapple juice and sweet and sour mix. As to why John deBary didn't call it a Blue Hawaiian we cannot say :)
