Salmon Bites in Minutes

  • Learn how to make the easiest healthiest salmon dinner in minutes
    INGREDIENTS:
    1 pound asparagus
    680 g cherry tomatoes
    1 1/2 pounds salmon filet
    the juice of 1 lemon
    the zest of 1 lemon
    3 tbsp extra virgin olive oil
    1 tbsp honey
    salt to taste
    3 tsp black pepper
    1 tsp dill
    1 tsp garlic powder
    1/2 tsp cayenne pepper
    1/2 tbsp Italian seasoning
    Preparation:
    Slice the salmon into 2 inch cubes
    Add the salt, pepper and rest of the seasonings.
    Cut the asparagus into smaller pieces as well. Season the tomatoes and asparagus with salt, pepper and olive oil. Spread in a casserole and add the salmon cubes on top. Bake at 400 degrees for 20 minutes and enjoy.

    I only have cucumber and cherry tomatoes.. could I just bake the salmon with that instead of the asparagus and other veggies? I can still marinate it all with that mixture you made....?

      Yes you can. Just leave the cucumbers out. Not great for baking in this dish

      @@daintybite oh okay! I also have a white onion and some garlic cloves lol...any advice ? I'm basically going to make the same dish but I'm also going to have some wild rice with it so that it's not a keto meals so to speak!

      You can add a touch of fresh garlic instead of powdered garlic, but really no need for the onion here. Rice would be great with this salmon dish
