As others have mentioned, the tapioca flour is too high in carbs for me, but I'll try the recipe with some other flours and then try the tapioca version when I've moved into maintenance mode (I LOVE tapioca flour in Brazilian cheese bread, so am not opposed to it forever 🙂)

Have you looked into soluble tapioca starch/fiber? It is a resistant starch and much lower in carbs, 4 net carbs per 1/4 cup; where regular tapioca flour can be around 26 net carbs or more for the same amount.

I think I'm going to research another dough recipe for myself, and skip the peas altogether. The empanadas that I knew long before my pre-keto days, had a small piece of hard boiled egg in one end, and an olive in the other. The filling was almost all well-seasoned meat with onion, garlic, pieces of olive and a few raisins. I think the lady who made them was from Chile?

If you're concerned about carb intake, this is not really low carb. It's 15g per empanada, so I would avoid using tapioca flour and using Lupin flour instead as lupin is 0 net carbs, and may work similarly.

I'm guessing the tapioca flour is there for binding and texture, so whatever substitutes you use need to have binding qualities and give the resulting empanadas a tasty texture. I suspect that any substitute in this area won't be just one item or a one to one replacement ratio. As for substitute ideas, just do your research, the easiest method is to look at similar keto dough recipes to see what they use and in what quantities and try to figure out why and Frankenstein one together that fits your dietary requirements.

I asked the same. I read it’s similar to tapioca. But I guess it’s also high in carbs but lower in carbs than tapioca. Her nutritional analysis on the website says 22 carbs per serving which would be 1 empanada. These are pretty good size so 2 would likely be enough for a meal totaling 44 carbs. That’s not a huge amount for a meal. I’m a type-2 diabetic and that would be within my per meal limits.
This is so gutting, I’m so stupid I ordered tapioca flour and it’s too high carbs for me. I wish I had checked beforehand & made sure it was suitable for keto and not just low carb. It spiked my insulin 🤦🏽♀️

Vernaz over at low carb recipes and having fun has a really good empanada recipe I have made it a few times and delicious, and yes low carb.

It's not low carb though, unfortunately. It's like aorun 15g per empanada, so if you're diabetic, this wouldn't be ideal.
