Pork Chops with Cabbage and Apples

    INGREDIENTS
    For the pork chops:
    - 4 6-oz bone-in pork chops
    - 1 tbsp salt
    - 3/4 tsp garlic powder
    - 1/2 tsp onion powder
    - 1/2 tsp allspice
    - 3/4 tsp black pepper
    For the cabbage and apples:
    - 1 medium onion, sliced
    - 1 tsp salt
    - 2 lb cabbage, sliced
    - 2 tbsp apple cider vinegar
    - 2 tsp Dijon mustard
    - 1 tsp allspice
    - 1 tsp black pepper
    - 2 large apples
    INSTRUCTIONS
    In a small bowl, combine the salt, garlic powder, onion powder, allspice, and black pepper. Mix together. Sprinkle on all sides of pork chops, using all the spice mixture. Cover and place in the refrigerator for 1-2 hours.
    Once the pork chops have brined, remove them from the refrigerator and preheat the oven to 375°F.
    Over medium heat, add 1 tbsp neutral oil in a 12-inch oven-safe skillet. Brown the pork chops on both sides, 2-3 minutes per side. Remove from the skillet and set aside.
    In the same skillet add the sliced onions and salt to the remaining oil and pork drippings. Sauté until softened and slightly brown, 4-5 minutes. Deglaze the pan by adding the apple cider vinegar, Dijon mustard, allspice, and pepper. Add the sliced cabbage and cook until beginning softened and slightly reduce in volume, 4-5 minutes. Add the apples. Stir and add the pork chops on top.
    Roast in the oven until the pork chops reach 155°F. Remove the skillet from the oven and allow the pork chops to rest for 10 minutes to finish cooking and reach a temperature of 160°F.
    Slice off the bone of leave whole and serve with the cabbage and apples.

    Made this today , a real winner. Almost followed the recipe exactly. Only deviation , added 2 tablespoons of apple cider to the pan deglazing step along with the apple cider vinegar. This meal is now in the recipe rotation .

    Iowa food ..pork chops , Iowa grown apples, and home grown cabbage. mmmmmmmmmm. :-) If you hear a knock on your door and see a strange lady on your porch.... don't fret... it'll just be me with a plate and fork in my hand.. :-)

    Pork, apples and cabbage is one of my favorites. Takes me right back to being a kid again. The salty pork and sweet apples is the key! Great idea to add the ACV for a little bit of tang.

      Yes! But I'd be afraid the ACV would strip seasoning off my cast iron. Maybe my seasoning too thin. :)

      pork tough? hmmmmm where did you buy that at?. I grew up in Iowa and have eaten a million lbs of pork.. never had any tough. It has to be cooked thoroughly and not left half or 3/4 done. The longer you cook it the more tender..

    I have a question, but first want to tell you that my Partner and I are using this reciepe for for Dinner tomorrow night. Looks DELICIOUS. I think I could smell it cooking as I watched your video. WOOF !!! Hey, a question regarding Beet Pickles. Do you think I could make a large pot of the brine you use for the Pickled Beets and can the unused amout for future canning. We just recently discovered all your vids and love all your Videos.

    Could this be finished in an air fryer? My oven isn't working and all I have atm is my Instapot, airfryer/toaster oven, and microwave (and the stovetop of course)

      Your toaster oven should work for it. That's all I have besides a dual cook plate.
