you have really helped me understand that rabbit is a gourmet item. here in the states it isn't eaten widely. I have so many extra rabbits I need to find some good recipes. you have totally changed my mind as how I should cook them. you are the first person who I feel has shown with extreme competence they know how to cook this meat. I am watching this at 6am and have dinner sorted for tonight. I will go grab a rabbit from out the back soon, get it cleaned and pop it in the fridge until I get home from work. I hope I have enough time to surprise the mrs with this nice dish. I will do some mash, mushy peas and lightly toasted crusty bread with a clove of garlic rubbed over it and then layered in real butter to go with it as it's now winter here and I think they will all compliment eachother very well. My Irish and Welsh always comes out in my cooking during the colder months, especially with stews or leftover fry ups with some bread n dripping which I'm gucking into right now.
I basically combined this recipe with your other one How To Prepare And Cook A Rabbit. Field To Fork, and it was absolutely Fantastic.....! Thank You !

I've never hunted rabbit before which is silly considering how abundant they are in my area. You may have inspired me to bring out my old dust-collecting 22. Loving the recipes, will have to try them out when I come across a few of the buggers. Cheers! :)

Just to confirm (although it defeats the object) an older, larger beast (portioned) makes a very pleasant dish. Made your bunny burgers at the weekend (lovely) served with roasted sweet potato wedges and mayonnaise. Finished them off tonight slow cooked in tomato sauce served over pasta...heaven.
i raise meat rabbits as well as show, and we have a few different recipes saved, current batch of kits is only a week old, so i'm gonna have to wait to see how they taste, lol
