Oh please, don't defend what you don't understand. Mirepoix is very specific. Mirepoix is specifically the vegetables cooked in fat for a long time on a low heat ,without browning them. If you don't do exactly that, it's not mirepoix and result will be very different. This is not about handholding, this video does NOT explain mirepoix, but claims that it does in the title.
Do you boil or Blanche the carrots first? Mine never cut that easy, they go flying around the room with every cut. Also, I’m afraid they won’t soften enough by the time the onion and celery are done

It looks to be the rough volume ratio.
That looks good if you’re making a Pot Roast! Add the Mirepoix to the Meat and you have yourself a complete meal!
