    In regards to dehydration and the fructose my speculation as to why carnivores aren't thirsty and wouldn't necessarily be dehydrated is that when on a high fat diet, you would be creating water as fat was being oxidized based on the mechanism put forward by Dr. Johnson

    Super great interview. One factor of salt is if you live in a hot climate and how much do you exercise or work each day. Then you probably need more salt.

One of the primary blood pressure drivers is uric acid, which is adversely affected by higher fructose, purine and alcohol consumption. The key takeaway for meat-only dieters is ensuring you drink enough water. If you are really concerned about salt levels, you can always test your hair mineral status.

      Spoke to some incredibly intelligent people today, me and fructose have very little to do with uric acid increase. It’s the PUFA. The alcohol. Being overweight/lack of exercise. Gout is caused by Metabolic syndrome And various inflammatory drivers. It’s an inflammatory disease. Fructose plus meet in various studies show no signs of Oxidative stress or inflammation

Time will tell. And tell the obese women in the 1800s why there were fat when seed oils didn't exist then. I'm sure it wasn't all the sugar.

    The salt driving glucose conversion to fructose and then obesity is but another mecahistic reason to limit carbohydrates. Another benefit of being low carb

    So if we have been carnivore for at least 3 years and are having plenty of fat with our meals, and, the fat we eat has stored salt, then technically we are getting the salt our body needs and we shouldn't need to add salt?     He is brilliant. Read his book "Nature wants us to be Fat". Just a few days of applying the principles in the book already makes me believe he is spot on. Avoid creating fructose is the key.

      does his book say anything about why nature wants us to be fat? is so that we will be less efficient at hunting, like a defence mechanism? i thought fat was good ant that it was supposed to be a storage for times when hunting didnt pay off. I think thats why thay say woman is getting fatter more easily than man, because they had to wait for food because men was stronger and didnt share so thay had to be more efficient at storing fat. I dont know.

    Hopefully Dr Johnson will read this, and anyone with gout. I've had un-diagnosed gout for 15yrs, diagnosed 3yrs ago, on 600mg allopurinol. Started carnivore Feb 1st this year. Two months in I accidentally stopped allopurinol (two week pill planner) had no symptoms so i just stayed off. Then I screwed up royally... I wanted natural B1 boost for my neuropathy so i ate a ton of nutritional yeast, about a cup in a week. OMG! Gout flares for the last 2 months... My uric went to 16
    My question then is knowing brewers yeast is bad for gout, now knowing nutritional yeast is the same thing, are the other forms of yeast bad as well? as in the yeasts that ferment foods such as fermented pickles, sour kraut, and cheese?

    I suppose it could be said that Doctor Johnson has quite the powerful “juice card” (sorry…) in fructose, urology, and metabolic spaces, yes? He has clearly made a significant contribution toward further unraveling the great and elusive nutrition puzzle, which I suspect will be even more contextually frustrating than it is now.

      Yes, essentially the body has so many internal processes in play that can protect and cause illness. The more we figure this out, the more complex nutrition gets. If you stick to mostly meat and add enough water (and salt for low carbers), and even some raw dairy, you should likely fare well.

      Drinking more water is key. The salt load doesn't matter as much as long as there is water!

    Wow ... another fantastic interview here Judy (also loved the Mary Ruddick interview). Only thing i wish Dr. Johnson would have talked about was his thoughts about adding salt to plain coffee (a diuretic) as would that be o.k. like with plain water ?

    Good to know water offsets salt. I am carnivore and do like to salt my eggs and meat. Will make sure to stay properly hydrated .

    I think that that's too much water though, half your bodyweight in oz.. ..That would mean way too much water for overweight people. That flushes out electrolytes.

    I feel very confused about how much salt to consume on a meat based diet. Some carnivore and Keto influencers encourage us to add a whole lot of salt like 2.5 tablespoons a day but I don’t think it’s suits me.

      Salt to taste. I salted a lot on keto, but on carnivore I'm not. If I feel the need again, I'll salt to taste.

      I did 2 tablespoons and sometimes more and still had cramps. So I cut out salt and now I do 1 teaspoon salt , if I need more I salt to taste. I don't salt my food anymore cooking. I also drink 60 oz day I'm 135 pounds. Find what works for you.

      I am a firm believer in the body's innate wisdom. Go with your body's cues. If you feel your legs swelling and you feel unwell, then you are likely adding to much salt. It's a fine balance with calcium, potassium and magnesium. That's why I like to start everyone with sole water and see how that helps. If it makes you feel worse, sometimes it's the need of potassium. It depends but for you, do what makes you feel best.

    Not sure drinking loads of water without electrolytes is actually a great idea, given it will dehydrate you as you'll urinate the mineral salts out.

    This was an amazing interview. I wonder the cause of my seemingly healthy 19 year old son?. Works out, healthy weight, Eats a lot of veggies, takes b6, magnesium and vit c, but has high systolic and low diastolic 160/50. Drs can’t find a cause. Wish I could make an appointment with Dr Johnson. He’s the only dr besides perlmutter that seems to know about blood pressure

    I think each aspect of this topic hinges on the person’s insulin sensitivity levels. Some of these phenomenon he describes… are not meaningful to me without knowing if the person is insulin sensitive and/or on a low carb diet or not.
    And the epidemiological observations are so confounded that they are worthless.
    Hope Doctors integrate more perspective on the huge differences in physiology between insulin sensitive populations and everyone else.

      It is difficult. He has mentioned studies of children that are IR and not IR. Essentially, my takeaway is that it CAN happen where if you are dehydrated, your body will store more fat. But the needle is VERY small if you are meat-based as you aren't really pulling on the fructose/glucose needle. But if you are IR and have high uric acid AND eating fructose, alcohol, etc., then dehydration is another added layer that can exacerbate the weight gain and IR situation.

    I suspect that in those people where salt was affecting sugar levels they were also consuming carbs either in the form of fruit or grain.
    Eating zero carb, especially with higher fat than protein, must be fine.

    Regarding to salt, wouldn't the type of salt make a difference (table salt vs Redmonds or sea salt)? Also, when eating foods with added salt shouldn't you wait a certain time before drinking water so you don't change your stomach's ph while foods are being digested? Isn't better to drink water 30 minutes after you eat and the salt that you consume shouldn't be impacting on the body?

    Hi Judy, I'm still confused if citrate is good or bad for us? When it comes from fruits, it seems to be bad for us and increases insulin resistance? But what about citric acid in the kitchen, or magnesium and, calcium and potassium in the citrate form?

    Dr Johnson covers in depth alot of physiologic effects that give you some good understanding.I wish he would study SEED OILS to see how it might amplify various physiologic effects also.He might find that the potatoe has a different effect than potatoe chips or potatoe fries.Rule out the salt, factor in the polyunsaturated fat in two and none in the other.Carbs might not be as desired by the animal without the SEED OILS in the food mix as some other authors have suggested in their studies.Many cultures had 90% of their calorie intake from carbs and were lean and healthy.Once industrial seed oils were introduced with carbs, did problems arise.I know mitochondria are also damaged and produce only half as much to only one fifth as much ATP for energy from polyunsaturated fat as animal saturated fat does, also PUFA's producing free radicals, oxidation, inflammation, weight gain, toxic aldehydes and drives carb addiction to attempt to replace energy loss from the damaged fat path way.You need to consume three and a half times more carbs to equal the energy that saturated animal fat from a ruminate would provide.

    Excellent interview !!! He did indicate, as many do, that you need some salt… but I always wonder how this applies to the long term carnivores who say they never eat salt and claim good health ….

      Some of the carnivores who don't eat salt also don't exercise and rarely drop a sweat. If you exercise a lot such as running, jogging, or heavy weight lifting then you will have to eat salt. Butter Gal is a good example of a carnivore who does the bare minimum amount of exercise possible (she only walks her dog) and so she doesn't have to eat salt to stay alive (but that doesn't mean she is optimally healthy) and her nocturia on a high salt diet might be a sign of an underlying medical problem she is just ignoring. She doesn't reveal before and after measures of her blood pressure and kidney function on a low salt diet so it's hard to say whether she is truly healthy or not.
      I almost died when I tried to do a carnivore diet for 2 weeks on a zero salt diet. I was following Butter Gal's low salt diet advice to cure my nocturia. But her advice is dangerous. My exercise routine makes a low salt diet impossible for me.

      I eat lots of salt as a Carnivore, Real Salt, without any BP problems. I would be concerned if I was still on a Standard American Diet.

      Meat and other animal proteins contain a decent amount of sodium on their own and it works great for many who are strictly carnivore.

      He said too much meat can be problematic ONLY if you had previous kidney disease. He advises keeping an eye on it, that´s all.

      I was wondering the same. I hear that while you are transitioning tequito or carnivore you should be replacing electrolytes but I wonder what about long term carnivores? Do I still need to be careful about my electrolytes?

      So many people are pushing LMNT electrolyte powders that I find it off-putting, to be honest. Our meat-eating ancestors never needed it, but they´ll argue that it will give us optimal health. Many ketovores and carnivores never took them, but now ppl make it sound like we must have it, even though their lab tests are optimal without it.

    Judy, my brother in law has boots of got. Tage blood pressure medicine but is gaining weight. He is on a SAD diet, but trying to do better. Could this however have an effect of being dehydrated and what are the effects on blood pressure to add electrolytes? Mainly want to know the results of combing blood pressure medicine with electrolytes.

      Insulin resistance is at the root of high blood pressure and gout flare up. Time to cut the carbs.

      He is a bit different. Watch the first video of this 2 part series. He had to reduce his fructose/glucose intake, drink more water, have less alcohol, and start healing. The medicine can absolutely affect things but it's not the main cause.

    Is it just me--or if carnivore is simply meat and water, the information in re: fructose, salt, etc seems to be only for those not interested in meat and water only. I like your program very much, but am starting to become discouraged. I know that people generally don't take the Blood Type way of eating seriously, but my naturopathic doctor helped my health quite a bit by suggesting I stick with the foods listed under Blood Type A. That went very well for a decade.
    Then I started eating almost entirely meat, beef, chicken, turkey and fish. For some reason, after several months I got my first Ulcerative Colitis flare, knowing I had Crohn's, but not having problems when I stuck with Blood Type A, no meat other than fish. It made me wonder about meat for me. Do you have any experience with Blood Types and their experiences with meat, depending on their blood type? I am drawn to carnivore or PSMF but I'm beginning to doubt if I should continue to try to pursue that thinking. Wow! I liked it a lot, but this UC flare is horrible! And, fruit and veggies are poison?

    So under what conditions do you break down fat for water? This makes no sense? Dehydration creates fructose to make fat but fat is broken down when you need water? Seems like a conundrum.

      Why do you talk like you understand anything ? The burning of fat creates carbon dioxide and water. The chemical reaction. So when fat is burned in the body the resulting water is called metabolic water. And if you're dehydrated this water can be used for hydration directly.
      He explains that in other interviews as well as the fact that some animal store fat for the summer to be prepared for drought in hot climates.

      No. The purines are found in the flesh (protein) part of the animal not its fat.

      The problem with fish oil is that it can go rancid in the capsules. You need to buy good quality oil that is kept cold so that it doesn't go rancid. Salmon has high levels of omega-3 and is not high in purines. Sardines and cod liver are high in purines

      Is inflammatory driven. If you do eat a conventional diet, I love your adipose tissue Will consist of linoleic acid. Aka PUFA. PUFA is incredibly inflammatory once it reaches the mitochondria. So no surprise you get a flare of an inflammatory condition when the body is in a state of increased inflammation. People blaming meat and fructose for information is ridiculous.

      There are studies that show dramatic increases and dramatic decreases cause gout flares. If you dropped weight and had gout, I bet if you binged on high fructose foods + salt + alcohol, you'd have a flare.

      @@NutritionwithJudy give me ONE human study’s where fit healthy individuals had seriously complications from eating fructose from honey and fruit. A healthy person.. not obese, not a heavy drinker or smoker, not a high intake of pufa. A fit healthy individual.. show me where fructose , salt , meat has caused them an issue

    This is a very confusing episode because he doesn't really mention studies except one. No numbers, no proof.

      Right? And no mention that animals who hibernate don't just fatten up on fruit. Bears, for instance, are omnivores and will also eat nuts, fish, deer, etc to fatten up. It's the COMBINATION of all these foods that make you increase body fat. I have NEVER heard of a fat fruitarian.

      ​@@lf7065Dr Johnson has talked about how the fructose/high glycemic foods activate the fat storage switch and then if you eat high fats food then you can become obese. That's the problem of the Western diet: you have high sugar (which activates the fat storage switch and promotes hunger) and also high fat (so we get ice cream, donuts, pizza, etc). High fat diets with very low carb don't result in obesity
