You know I cooked a roast in my slow cooker on the back porch in the summer. We made a meatloaf in the turkey roaster last week. I even have a side burner on my gas grill and that's how we cooked corn and potatoes! I'm with you no longer cooking in house! In the summer!
Can't wait to try & cook my next roast like this. I normally throw it in the crockpot with potatoes, carrots & onions. I use water, soy sauce (instead of Worcestershire), salt, pepper & garlic to season. Serve with jasmine rice.

With the cost of meat so high, what are your tips for picking out a nice cut of meat? I've tried some really expensive cuts that haven't been so great. My mom use to do a "7 - bone roast" every Sunday and it was always good.

Check Ebay. That's where I buy a lot of my top cookware and cast iron broilers with lids. I prefer Lodge because it is made in America. The non stick coating is really bad for you because it leaks chemicals when hot. You can never go wrong with cast iron made in the USA.

Hi Tammy I live in Pennsylvania however my parents were born and raised in South Carolina all their lives. My mom was a great cook and was raised by my granny and her 2 sisters and they were as southern cooking women as possible. I also love to cook and I enjoy watching your cooking. Tammy your roast, gravy & vegetables look so good. My Gram, Mama & Daddy taught me how to cook my roast like you just cooked. It is the best and so tender. They didn't add carrots because some of the children didn't like them. I cook carrots & large cubes of potatoes in ours and serve over rice. I change what I put in mine from time to time. I just didn't have any here at that time. I usually have it in the fridge but I keep store bought just in case. There is nothing wrong with using it but homemade is better.

What did you have for side dishes? I always have either cubed potatoes. In pot or mash potatoes. Usually lots of carrots, celery, peas and even cabbage!
I watched you do the smoked sausage if you cook your sausage and onions until the onions and sausage is done. Put them in a sauce pan put a little butter in the sausage then put two cups of rice over them add water and there is nothing better. We cook Camilla red beans and eat them over the sausage/ rice and onions. (Mississippi). A pone of cornbread. Good old Sweet tea. I am 68 years old my grandmother passed when I was 12. I love when she cooked this. Everybody else threw the sausage/onions in the rice and stared cooking it. Then I figure it out. One of my favorite meals.

I'm replying with an update. This was so much better than roasting in the oven. It did not dry out, and it made what would have made a lovely sauce had I not tried to cheat and use olive oil spray to brown the meat. You need more oil on the pan than just a spritz to brown the chuck roast. While I didn't necessarily burn the the side w/out butter, it produced a bitter flavor again w/out enough oil which then made my carrots a tad bitter. BUT! The roast was so tender and juicy and not dry (like mine will get roasted in the oven). I threw some quartered small potatoes in the last hour to cook until tender. My kids TORE IT UP!!! My daughter even ate the carrots!

My liquid never reduced! I took some liquid from the pot and mixed it with flour and a smidge of cornstarch with a whisk. Still kinds runny! What ever did I do wrong?

Tammy, you are exactly right, my older siblings and I watched mom cook, we weren't allowed to do any hands on, but she never used exact measurements, just a little of this and that, when we got older and asked her for recipes, she would just giggle and say to search our memory. Trial and error makes good cooks and I go by that method to this day, you have a great show and have made alot of delicious meals, I'm still yet to try and make a peanut butter pie, maybe for Christmas, but additionally, she also told us to be our own critic and taste everything we make
I must be doing something wrong . . I don’t put my potatoes in my roast . To me they loose their flavor and their texture a corn meal . I’ll boil them on the stove season them and put them in the pot any ideas.

I do both cream Potatoes is what mama called them or Potatoes and carrots cooked in the roast. Either way we always have Potatoes with our roast :)

Well the only Roast I roast in the oven and slice is rump roast. The cheaper cuts just need to be simmered on very low heat until good and done.

May is in Macon at Mercer and Amy is a Senior in High school. 15 months apart and we planned the second but not the first haha

I agree about that, it cooks up more tender than in the oven!
No need for the flour on the roast. Just putting a little oil in the pan will also make the roast brown.
It helps with the sauce.

Why not use an immersion blender to make your gravy/sauce to put over taters and meat thats the way I do it. Everyone loves it.
Chuck roast is my favorite for flavor and tenderness. Do need to get a pan like that, usually do in crock pot.😋

I make mine like this but use Kitchen Bouquet instead of Worchestershire sauce. Such a good meal. I eat like the veggies, too. Including the celery.

Tammy, you are exactly right, my older siblings and I watched mom cook, we weren't allowed to do any hands on, but she never used exact measurements, just a little of this and that, when we got older and asked her for recipes, she would just giggle and say to search our memory. Trial and error makes good cooks and I go by that method to this day, you have a great show and have made alot of delicious meals, I'm still yet to try and make a peanut butter pie, maybe for Christmas, but additionally, she also told us to be our own critic and taste everything we make

I must be doing something wrong . . I don’t put my potatoes in my roast . To me they loose their flavor and their texture a corn meal . I’ll boil them on the stove season them and put them in the pot any ideas.
