Old Fashioned Pot Roast

  • Old Fashioned Pot Roast
    3 Tablespoons olive oil, divided
    Kosher Salt
    3-5 pound chuck roast
    2 onions, peeled and cut in half
    8-10 carrots
    pepper
    2 cups beef stock
    3-4 rosemary sprigs
    2-3 thyme sprigs
    Preheat oven to 275°.
    Heat a large pot or Dutch Oven over medium high heat. Add 2 tablespoons olive oil, and let it get really hot. Generously salt and pepper the chuck roast on both sides and around the edges. Place the roast in the hot oil, allowing it to sear for about one minute per side. Remove to a platter. Add another tablespoon of olive oil to the hot pan; add onions and carrots. Cook for a few minutes until vegetables are browned on both sides. Removed to a plate.
    With the burner on high, add the beef stock to the pan and whisk constantly to deglaze and loosen all the little bits from the bottom of the pan. Place the meat back into the pot. Place the onions (cut side up) and carrots in the pot on top of, and around, the meat. Make sure the beef stock comes about halfway up the sides of the meat. You may need to add another 1/2 cup or so. Place the rosemary and thyme into the juice to make sure the flavors distribute well.
    Now, cover the pot and place in oven for 3 to 5 hours depending on the size of the roast: 3 pound roast = three hours; a 4 pound roast = four hours; 5 pound roast = five hours.
    Do not disturb the roast during the cooking time. Leave the oven closed, and the lid on. When the cooking time is over, check to make sure the meat is done. A fork should go into the meat very easily, and the meat should be very tender.

    I cook my pot roast like this but I also add celery and potatoes. Pot roast is like a hug from heaven.

      @@Reitlermeema I add my potatoes about an hour before serving. Or boil and mash. I love the broth of the pot roast over everything. Yesterday a Chuck roast was $33.00 at Walmart. I can’t.

      Really an excellent tutorial for beginning cooks! Basic, simple, easy to follow instructions and ingredients that are in the pantry! I'm the only one I cook for now, but I like to watch videos to see if or where I can improve.

    Tom’s directions makes his meals so simple by preparing and arranging the ingredients on the counter.
    As usual Melissa lists not only the ingredients, but careful directions. There’s no room for error with Melissa’s detailed directions.
    New cooks may not know that.😊
    *I usually take my roast out of the refrigerator before I start to prep my vegetables, that way you won’t have cold spots in the roast.

      In our family, my dad did all of the cooking and almost every Sunday, year round, he prepared a rump roast, always loaded with plenty of garlic. Vegetables always included onions, celery, carrots and potatoes. When friends stopped by they always drooled as if they had never tasted anything so good. It always smelled good too. The one thing he always added was how much a pound the meat cost and my mother’s response was always the same “oh for goodness sakes Ed. Missouri

      I don’t like potatoes cooked with beef in beef stock. I think it gives the potatoes a weird color and flavor. I never cook my potatoes in with the pot roast. I always make mashed potatoes to go with it.

      We always had potatoes, celery and carrots. No onion. We added onion powder to the seasoning.

    This the first meal I ever made at 11 years old. Mom called me from work and talked me through it. I did have potatoes in it and stewed tomatoes on the top.

When you cook the potatoes with the roast, they come out brown and we simply don't care for that as much. But we do agree that potatoes are needed to make a pot roast meal complete.     My roasts have been so dry and tough after watching this video I think I was not using enough broth and the oven on too high

    Thank you, Tom and Melissa, for sharing this. So many young cooks do not know how to make a pot roast. This is how I make mine and is a no fail meal if you follow these directions. If you and yours are folks who like the potatoes cooked with the roast, just wash well and chunk up in top of your roast. If you do not care for the peelings, just peel them then cut into chunks. If I am having many come eat and fellowship with me, I make mashed potatoes on the side and not in the roast whereas to stretch it a bit. I also like to thicken the broth from the roast for my gravy. Perhaps you can do a segment on how to make gravy from the broth for the ones who may not know how to do that. You folks are such a blessing to many. Thank you.

      I also add potatoes and make gravy from the broth. Soooo delicious! But warning don't cook your potatoes as long as the roast if you're cooking a big roast like this one! Add them toward the end of the cooking time! An hour or so.

    I may try your oven method. I have done my chuck roasts in the slow cooker for years. I also add potatoes and a envelope of Lipton beefy onion soup mix. I am going to use your tip on keeping the veggies larger so they do not fall apart. We always learn something from you two. God Bless!

    So glad its getting to the time of year to enjoy this type of meal. I love a pot roast, and yours is making my mouth water! Ive always used my,old cast iron dutch oven on top of the stove. Also i use seasoned flour on the meat before braising, and plug garlic pieces into the meat. Theres really nothing better than those roasted onions though, we would have to wrestle over those! For those who keep asking about potatoes, I usually serve this with mashed. Ill gladly try your oven method next time, along with the herbs!😊

    I love your recipes but sometimes you make something that is just not half of Americans just can't afford. This is a great recipe but I haven't been able to buy a pot roast in years
    That peice of meat is just simply to expensive for my budget as well as millions of others in America. You have great recipes and I will continue to watch your show. You are a good chef and you have helped to inspire my grandson.

      We agree that the prices are outrageous so we always shop when it’s on sale. And we use every bit of it. We later made leftovers into vegetable beef soup. I’ll be adding that video soon. But you’re right, you must be very careful when shopping!

    I made this today, but added a few cut up potatoes. I cook it in an old fashion granite ware roaster. The leftovers make excellent vegetable beef soup too.

    I am so happy you cooked a roast & seared it on each side for only a minute. I've been cooking roast for eons & it's always great. I watched a person sear their roast 4 minutes on each side & all the way around on the ends. They showed their roast as perfect but it looked tough. No, thank you. 😊.       I always thought you had to get a brown seer on a roast. And then you scrape the pot for all the flavours

      No matter how long you sear a chuck roast, if you cook it for 1 hour per pound at 275 with stock or broth and veggies, it will not be tough.

    I add garlic, mushrooms, and potatoes to mine also. Sometimes celery if I have it on hand. I will also sometimes add some Onion Soup Mix to the top of the roast. Mmmm, soooo good.

    Looks good! My mom would always use the crockpot for during Sunday Schooland church so we had a lot of Sunday pot roasts as well growing up. However, we always had potatoes cooked with it on top for the roast to get "steamed" and flavored. Then she would make gravy from the broth. Mmmm Mmmm!

    I also coat the roast in flour along with the salt & pepper before I sear it, then sautee the onions and deglaze the pot with a cup of wine like malbec or what have you. Then add in all the seasonings and add the roast back for an hour and a half, turn the roast and add in the veggies and cook another hour and a half or so. I then take out the roast and shred it in a separate bowl and make a roue out of flour and butter and add it to the pot to make a thick gravy, add the shredded meat back in and serve it. I add 2 bay leaves 4 teaspoons of worcestershire, two teaspoons of minced garlic and a tablespoon of tomato paste. I take out the bay leaves and the sprigs of thyme and rosemary when I take the roast out to shred it.

    I cook my pot roast in a pressure cooker. I also put potatoes chopped in half. We also love our roast meal. I have onechild who was never into the potroast thing. But he would take the meat and shred it and put melted cheese on and make a beautiful sandwich out of it.😊

    I LOVE a good pot roast like that. One of my favorites is having pulled roast sandwiches the next day. Some of that roast & mayo on a good sandwich bread is all I need. Wonderful!

      @@babasheeny3634 My favorite is Ezekiel bread from Whole Foods, if you like the grains & texture but with everything being so expensive lately we've been going with Artisan bread from Aldi's. They're very different but the Artisan bread is a good white bread imo.

    I used to make it for my wife god bless her soul. Sometimes I put it in a slow cooker and cooked it all day long. Exactly the same except I used the slow cooker instead of the oven.. Good work guys

    Another great recipe! Ty! one thing that works great and adds extra flavor is Kitchen Bouquet browning sauce ……..adds ALOT to the gravy. My dad always used it and its been around forever. Now im hungry!😋😉

    What about taters? I also like diced tomatoes or tomatoe juice with the broth. It really helps tenderize the meat and adds a ton of flavor. I love buttermilk cornbread with it.

    OM Goodness! That looks delicious! That is the way I used to fix pot roast and we had it almost every Sunday. I don’t fix it much now because it’s just me and I’m afraid I wouldn’t be able to eat it all. I could,however, make stew out of the leftovers.       I totally understand that it's different when you're cooking for just you. We ate a couple of meals from this and then made soup with the leftovers. Some of our kids enjoyed the soup, too!     I could almost taste that through my screen. Pot roast was a frequent dish my mom made. the nice thing is the versatility of a pot roast. Mom always added red wine, lots of garlic and potatoes. I just couldn't get enough. Family will be visiting next weekend and you just decided for me what we're having.

    Whenever we would have a pot roast we would just add these ingredients to a pan , roast , carrots , potatoes and onions then we would cover the top and put it in the oven . Then when it was time to eat we would fix some brown gravy for it , and it was just really good ! At the time there was 4 of us and our roasts were always about this size and by the time everyone else got finished eating there would still be quite a bit left but by the time I got finished eating there wasn't hardly anything left 😊 I just loved it ! We're old fashion we never used spices or anything like that and that's just really how I like my food ! Most of the time when we had a roast it would be in the fall or winter . I know that I always loved it !

    I’m making this tomorrow using a sirloin tip roast. Hubby is a cattle farmer so we’re pretty spoiled. I usually have the chucks ground up but I asked for some chuck roasts with our new quarter.

      Some people do. We understand. We just don't care for the potatoes being brown when you cook them with the roast. We are loyal to mashed potatoes with this meal.

    I salt and pepper my roast then I flour it before I put in my hot oil. After I brown it on all sides I cover with water and let it boil for an hour or so making sure water just covers my roast. After and hour or so I turn my heat down and let it boil on a low to med heat. About 45 minutes or so before serving I add my carrots, potatoes and onions and let those get tender ! Talk about some good eating! Yum yum

    I had a craving for a good hearty stew and made a big batch and now have 6 meals. I discovered a very hand tool for the kitchen is one of those infrared thermometer gun. When I need to know my pan is at perfect temperature it tells me. Not too expensive on Amazon.

    Mashed potatoes with gravy from the pot roast is my personal FAV... every once in a while with the potatoes cooked in with the roast...yours looks DELISH!

    My wife puts a cup of apple juice into a saucepan, and puts it on the stove to simmer. She reduces it to a syrup. We add this sometimes to the roast. The syrup is like an apple concentrate, and adds a special flavor to the roast.

    I cook a pot roast the way my grandmother made it. In a large pot. I sear it on both sides. I add a cup of water or beef broth. When it’s cooked to my liking I add onion’s carrots and potatoes. It’s delicious no matter if it’s cooked in the oven, or the stove top.

    Pot roast is one of my favorites. I make it all year, but I really look forward to it in the fall. One of my recipes is very similar to yours, but I cook mine completely on the stovetop or crockpot now. The browning you get from that dutch oven is the key, I think. it just isn't the same any other way. Thank you for this video. I'm really enjoying your channel!

    This pretty much my Dads recipe except he added chunked potatoes and celery.
    This was Sunday dinner he got it in the oven at 10:00 and we headed to church. It was was done at one. We had a 3 lb chuck roast every week. No one got any after Sunday because the leftovers were Dads lunch for the week.

    We had it every Sunday too. She put it in the oven before church and we hoped it wasn't going to burn. We should have known it wouldn't burn because she did it the same way every time!

    I can eat pot roast, beef stew, chili, and soups, all considered cold weather foods, all year round. Just as good in the summer to me😊

      I agree. Sometimes, though, when it's super-hot outside, we hate to turn the oven on. But it's definitely approaching the time of year when we like the comfort foods of soups, chilis and stews! And IF you have any leftover pot roast, making a vegetable beef soup is a great way to use every last bit of it. That recipe is coming soon!

    We had a roast almost every Sunday. Sometimes it was a ham. But yes it was the meal I learned to cook on. My grandparents came for dinner or we all went to my uncle and aunts for dinner. Always a big dinner.

    If you cut your carrots at angles rather than straight across they cook more quickly , your pot roast looks delicious.

    I usually add 3-4 cut up russet potatoes during the last hour. If not, I serve with mashed potatoes and thicken the beef broth with a bit of flour or corn starch for gravy.

    I cook my pot roast like this, but I also add garlic, celery and new potatoes. agree on herbs, however, Veggies a must, and yes cooked all day, and the meat falls apart, have a blessed day!

    That looks wonderful. I cook it a little different. I’ll make some slurry for gravy and I pour on top.
    But it’s not right or wrong way. It’s just how you and your family prefer a great recipe.

    Nothing like a pot roast dinner!!! Oh it takes me way back to our family dinner table. We had dinner together every night, including Saturday pizza night. Even up until we moved out my parents rule was dinner at the table together.

    Your roast looks soooo good. I fixed roast yesterday & for the gravy, I used Brown Gravy mix from Aldi. I use that gravy mix for lots of things & also put sliced mushrooms into the gravy. Everyone does a little something different ❤
