CARROT CAKE RECIPE
Ingredients
2½ Cups | 300g Carrots, shredded
4 Eggs
2 Cups | 400g Sugar
1 tsp Vanilla
1½ Cups | 375ml Vegetable Oil
2 Cups | 250g Flour
2 tsp Baking Soda
2 tsp Cinnamon
½ tsp Salt
½ Cup | 1 Stick | 115g Butter
7oz | 200g Cream Cheese
3 Cups | 375g Icing Sugar | Powdered Sugar
Instructions
Add the shredded carrots to a medium sized mixing bowl.
Crack in the 4 eggs, add in the vanilla, sugar and oil and mix well until everything is combined.
In a clean bowl sieve together the flour, baking soda, cinnamon, and salt.
Pour the wet ingredients into the dry and fold together with a wooden spoon until you can no longer see any dry flour.
Pour the cake batter into one 8 inch or two 7 inch lined and greased cake tins. Bake in a 170C | 340F oven for 30-40 minutes or until a skewer comes out clean. Leave to cool completely before decorating.
Beat room temperature butter in a stand mixer or with a hand mixer for 5 minutes until pale and light and doubled in volume.
Add the cream cheese to the butter and beat for a minute until well combined.
Sieve the icing sugar or powdered sugar to remove any lumps and add it to the butter and cream cheese in thirds, beating well in between each addition.
Use a spatula to scrape down the sides of the bowl and beat for a further minute until the frosting is fluffy.
If you have made two cakes spread a cup of cream cheese frosting over one cake before topping with the next cake. Cover the cake with the cream cheese frosting using an offset spatula.
Leave the cake and frosting to set for a few hours before cutting a slice and enjoying.

I did it twice and it came out super oily both times. So in the end I added only a little bit more than 1/3 of the oil and added 45 grams more of flour and it finally turned out AMAZING!!! 😋😋
I made this cake today and it was amazing! I didn't have any cream cheese at home so I made a lemon butter cream frosting that also gave it a tangy taste! Perfecto! 🎂

I'm here to give you results!!!! I made your recipe 📖!! Coming from a carrot cake lover it came out amazing! I was so tempted to add brown sugar or add vanilla to the frosting and I stopped myself (main reason why things don't turn out like the video) and did everything identical to you I was tempted to mix cake with mixer😏😫 I'm like mix a cake with wooden spoon🤔 but I did!! And let me tell you guys if you want the best homemade carrot cake stick to everything she says! BTW I will never use another creamcheese recipe this frosting was creamy and silky 😋😋😝 use good products I used Philadelphia cream cheese and real unsalted butter! Hi sooooo devine, sooooo light and soooo moist an fluffy, i just hoped that all cake can be this simple, other than that, i do feel carrot cake need brown sugar , so i used brown sugar an i do feel carrot cake need nut so i used half cup walnut and im soooo glad u never used: coconut an u never used raisin and no pineapple an no applesauce , every1 isnt a fan of it an also im soooo glad u made your life easier an others too , i mean why would a person want to use several baking pans an clean everything, not every1 know how much batter goes per pan when using several baking pans, not every1 know how to guess , its better to use only 1 baking pan

Hi Carina, chanced upon your channel and made this today, my crumb was dense and packed (I used 2 9x4” loaf pan baked at 170 deg C for 40mins ) unlike yours was airy. Any idea why? Tks

I would say 350 for maybe 15-20mins. Just keep and eye on them and take them out when they spring back when pressed 😊

I made this cake 2 days ago. I tried this cake today, unfortunately, it tasted very wet. It didn't have much flavor to it as I thought it would. I also made the cream cheese and it was extremely thin in taste. I have to admit, I live in Texas, I'm use to carrot cake being pretty flavorful and icing thick. This was easy to make, but just didn't have that umph, I was looking for.
It didn't have much flavour but it was still nice. I didn't like the soda taste to be honest. To think I had used 2 tsp of vanilla. As I like more flavour but then I tasted thr bicarb.

baked this cake today ..followed the recipe to the T ..but it was raw inside .. bakd well outside all around . firstly one cant bake this size cake in an 8 inch .. luckily i have some experence i realised while mixing the cake the batter was way too much for an 8 inch pan . so dumped the batter in a 9 inch .

Hi, shouldn't I bake the cake for longer if I'm not separating the cake into two sections? Also I have a fan bake and normal bake setting for my oven, which setting is better for this cake? Thank you :)
Fan bake, if you're baking in two seperate tins it will take about 30-40 mins, in one tin it will take 40-50 😊 All ovens are different so just keep an eye on it and cook until it springs bake when pressed.

For Frosting it is okay that i will use the condense milk rather than the sugar powder?
Your batter was alot more runny than the last recipe I tried which called for 5 eggs and 3 sticks butter just wasn't as moist as I like I want the perfect recipe so I'm trying your thank you for the tips with the carrots 🙂🙂

can I use cake flour?
Hey that’s the same recipe as my Granny. Only difference is we do 3 cups carrots, 1 teaspoon of soda , no vanilla and cinnamon to taste. BEST CARROT CAKE EVER !!

Great recipe! Batter tasted sweet but when I put it to bake for 40 min on 340 degrees Fahrenheit, it was still raw! Why? How more long should I wait?

Delicious cake but it’s too oily. In another video a tip they mentioned was to put half oil and half apple purée instead of only oil and this will keep the moisture but will not make the cake too oily.
Now before eating it, I put it on a piece of kitchen paper for 15 mins so it could suck up the excess oil even a little.
Is the cinnamon necessary?
i made this cake today and i used two 7 inch tins, the cake didn’t cook properly from the centre☹️ Can anyone explain why that might have happened?
