NO BAKE SALTED CARAMEL CHEESECAKE RECIPE
Ingredients
1 Cup | 200g Sugar
2 Tablespoons | 30ml Water
½ Cup | 125ml Cream
3 Tablespoons | 42g Butter
1 Teaspoon Sea Salt
9oz | 250g Digestive Biscuits or Grahm Crackers
1 Stick | ½ Cup | 110g Butter
1⅔ Cup | 400ml Heavy Whipping Cream
9oz | 250g Cream Cheese
⅓ Cup | 40g Icing Sugar | Powdered Sugar
Flaky Sea Salt for decorating
Instructions
To make the salted caramel sauce measure out the sugar and water into a medium sized saucepan. Place the saucepan over medium heat and stir until the sugar has dissolved. Cook the sugar for 8-10 minutes until it has become a deep amber shade.
Remove from the heat and pour in the cream. The sauce will bubble up but continue to stir until the cream is evenly combined. Add in the butter and mix until combined. Add the salt slowly, tasting before adding more.
Leave the caramel to cool slightly before placing into an airtight container or jar and placing into the fridge.
For the cheesecake crush the biscuits with a heavy object or use a food processor. Place the biscuits into a bowl and pour over the melted butter. Mix to combine.
Press the biscuit base into an even layer in a greased and lined 8 inch of 20cm cake pan and place into the fridge.
Whip the cream until soft peaks and set to the side. Mix together the cream cheese, sugar, and ⅓ Cup of the caramel sauce until smooth. Pour in the softly whipped cream and mix until well combine with a whisk.
Pour the cheesecake filling into the cake pan and use an offset spatula to smooth out the top. Place back in the fridge for 6 hours or overnight to set.
Remove the cheesecake from the cake pan and pour over ⅓ Cup of the chilled salted caramel sauce and spread to the edges. Sprinkle the with flaky sea salt and place back into the fridge for at least 2 hours before serving.

This recipe did not firm up in the fridge, despite sitting there for 8 hours. I had to trash the entire filling and make a new filling with added 14g of dissolved gelatin powder for it to work on my second attempt (I'm so happy it worked with the gelatin as this was for my nephew's birthday). I added the dissolved gelatin into the cream cheese portion of the recipe, right before adding the whipped cream to the cream cheese. I don't know why this recipe omits the gelatin but it is not optional. This cheesecake was delicious otherwise!
Same here, whipped it for so long but it just didnt thicken...what a shame, I wont try this method ever again.

you need to experiment with the ratios, I prefer adding a bit of mascarpone

Here's a great recipe, minus the lemon curd. I've made this cake many times and it tastes amazing! (add 100 grams of melted white chocolate to the batter for extra flavor.)

@@samarakirkk I make a lemon version of this cake, I use 1 can condensed milk, I block cream cheese, 300ml cream & 120ml lemon juice (about 2 lemons, must be real lemon juice or it won’t set) Beat cream in a large bowl. In another bowl mix together room temp cream cheese & condensed & mix well, add beaten cream & lemon juice to mixture & beat well. Spoon mix onto biscuit base & spread top with lemon curd. You can also top with cooled but not set flavoured jelly, make the jelly to double strength ie: use half the water. let it cool but not set, pour over the back of a spoon over the top of cheesecake, let set for 6 hours or overnight. Enjoy!
Finally someone who is not using cups or tbsp measurements, always use grams and mils , they are so much easier and simpler

The only problem I face is, as soon as I add my cream cheese mix to the whipped cream and just give it one or two swirls the whipped cream looses its texture and turns runny. I have tried by beating the mixture for very long time but it’s just not working out... where am I going wrong?
try adding gelatin, all her other no-bake cheesecake recipes include it
would suggest mixing the whipping cream to stiff peak first before folding them with the cream cheese mixture for beginners like me. i followed this video (mixing halfway then mixing with cream cheese) but my mixture wouldnt be stiff 😭 just popped it in the fridge hoping for the best

Hey thank you for your recipes, my 20 year old son called me today telling me he was making this. It’s setting now. I wanted to comment because he’s a young lad in college and he was confused at the switch of the video where you just had a hand whisk to the thickness of the next scene. And he spent 30 mins or so trying to hand whisk the mixture. I had to look at the video and help him see that part.He ended up going door to door to borrow a hand held electric mixer. I think for the future it would be great to mention the use of an electric mixer in the video because you may be getting some newbie bakers who don’t look up the tools mentioned in the subject portion as being what is needed for this project. Just my two cents!
May I know what is the size of cake mold will be recommended to be used to do this cheesecake ?

As homemade you won’t need gelatine but if u LOVE them inside it and u have some and don’t want it to be waist u can put it inside

Use baking paper around the edges and bottom so you are able to pull the cheesecake out. They do work better with springform pans though so if you see one maybe pick it up 😊

How come this is the only one out of the no bake recipes that doesn’t use gelatin? Will it hold?
This cheesecake did not form in the fridge for me, despite sitting there for 8 hours. I followed the recipe exactly. After 8 hours in the fridge, it was the exact same consistency as when it was first put in. I had to scoop out the entire filling and toss it, what a waste. Ran to the store to get more ingredients and trying again with gelatin this time, my nephew is expecting this for his birthday tomorrow so I really hope it finally sets this time!
