    My favorite technique for wrapping burritos is using parchment paper. It can go into the oven or microwave--and the tortilla won't stick to it. Cut squares of paper off the roll then cut in half diagonally. Next, put the rolled burrito on the long side then fold the ends in and roll towards the remaining corner. Lay a flat row of them in gallon Ziplocs and they won't unwrap while freezing

    I do 24 eggs in a casaroll dish and a dash off milk. Salt & pepper. Cook in oven for 10 min stir with fork. Cook 10. minutes increments until scrambled. 350 temperature

    To make scrambled eggs for the muffins/biscuits, I line a sheet cake pan with parchment paper and pour my scrambled egg mixture into the pan and bake. I then cut them into squares. It's a real timesaver.

      I was coming to see if anyone has suggested this. I've used a roasting pan for mass catering (either in oven or on stove across two burners) but you have to have someone watch it carefully and whisk it regularly as it cooks if you want it fluffy. If you don't mind a solid sheet of egg, use a cookie cutter to cut your rounds for muffins and chop the inbetween bits up for burritos.

    I have a Whoopi pie/muffin top tin that I use for the English muffin breakfast sammies. They are round and the same size as the muffin. I also use round cheese slices. The sausage patty or Canadian bacon slice is already round and since bacon is perfect, it can be whatever shape it wants to be.

    It helps to microwave the tortillas for 45-60 seconds to make them more pliable before rolling the burritos. Love your channel!

    If u have a dehydrator u can mix up a bunch of eggs and dehydrate them in oven or dehydrated. When they are totally dried out, no moisture in them; then blend in a blender or a finer mixing you can take the dehydrated eggs and turn them into powder then put it in canning jar , fasten with canning lid and remove air.finished put in cabinet will last for 3-4 years in dark cool cabinet. Tastes great or mix up batches stir good. Put in freeze bags and freeze. I did this before I got a hydrater

    Breakfast sandwiches are 100 times better if the muffins are toasted first. We split, lightly butter, toast on cookie sheet, let cool, then assemble. Well worth the extra step.

    My sister donated your kidney years ago to a "friend of a friend". My sister had 2 little boys at the time and the woman had a teenager. They are friends today and the lady is doing great. Organ donors are awesome! How exciting for you friend. She is doing something wonderful.

      Oh wow! Organ donors really are amazing! This was a few years ago and she is doing well and while her donation was anonymous, she got an update after one year that the recipient was doing well.

    Muffin tin suggestion. Use jumbo size. They fit the muffins.
    Burrito wrapping. Fill across the center very full about an inch in from sides . Pull bottom up and over filling. Fold sides in. Snug back against the filling towards you and roll. Don't be too firm or tortillas will rip. Also easier if they are warm, more flexible

      She is fully recovered. She is one of the most selfless people I know. Her organ donation saved a baby. AND just a few months after her surgery, she began donating plasma to help our daughter who receives IVIG (plasma product) infusions!

    My grandparents used to make scrambled eggs in a crockpot for big groups if i remember correctly they just wisked them ll up threw them in the slow cooker and sturred them every so often. I'm sure there are instructios online by now.

      Oh! I bet it works really well! Until it comes time to clean the crockpot... I would definitely use a crockpot liner for that!

    Some great ideas and recipes. The only thing I do different is I pop the English muffins into the toaster and get then lightly browned. Otherwise my kids would tell me the sandwich was too soft.

    Scrambled eggs quicker - or at least less labor intensive. Oven scrambled eggs. 24 eggs, 2 1/2 c milk, salt and pepper to taste, 1 stick butter. Preheat oven to 350 (175), melt stick of butter in 9x13 pan in oven while it’s preheating. Mix other ingredients (can adjust amounts to personal preference). When oven preheated and butter melted, pour egg mixture into pan. Stir every 10 minutes until done. Takes about 30 minutes.

    Never heard of Sriracha Bacon live in CA. You do a great job if I can get my freezer with a shelf vacant going to try some of these. Living as a widow it would be a good idea to have some meals ready prepared.

    You can make scrambled eggs on a sheet pan in the oven. I learned that as a kid at summer camp. To make a lot of scrambled eggs or for cutting out squares for egg sandwiches, the cook poured the eggs onto a sheet pan and put it into the oven. No idea on temp or for how long. I would assume your hamburger chopper stirring thing would break up the eggs well. Love your page and wish I could subscribe to your club by paying monthly. Just a thought.

      Christie here: Ah, good ol' summer camp! That's a great way to learn how to cook for a crowd. My mom worked with her Grandma at a logging camp in the Rocky Mountains in the 50s and she has definitely taught me a few tricks to help with large batch cooking.     A suggestion for the burrito rolling, try rolling over one long edge and tucking it under the ingredients, then roll over the two sides, and continue rolling to completion. That's what I do and it works well. :) Great job though, they look delicious!

    Go back and look at how you wrapped the burritos in the foil. That's how I do it. MUCH easier. I am also living in Texas since 1976 :-)

    I'm just loving all of your videos! I bought some silicone muffin top pans from Amazon, and that's what I use for the eggs on my breakfast sandwiches. I just crack one egg in each cavity (I usually use a fork and break the yolk after I put it in) and bake at 400 degrees for about 12 to 15 minutes. Depends on your oven, of course. They are the perfect size for the English muffins! They also have metal ones, if you don't like the silicone. And be sure to put the silicone ones on a cookie sheet. Hope this helps!     microwave ...cooks em soooo quick ...i have a big plastic bowl ...pop loads of eggs in... n there done in record time .... microwave cooks em lovely ...🌷🌷

    Grease a cookie sheet and mix alot of eggs together put in oven 350 tell set up about 30min just depends on your oven. Just watch them

      In theory you absolutely could, but I worry they would be hard to get out of the cookie sheet. Possibly using parchment paper would work for being able to easily remove them from the tray actually...

      Hello, I have a rolled French omelet recipe that does just that. Except you don't chop up the egg afterwards. You oil or butter( it IS French after all) A big
      piece of tin foil that you've lined the cookie sheet with. The eggs cook in a very thin sheet and you add spinach and melt cheese after they have set a bit, then you just roll it up like a jelly roll cake after you bake it for a very short time. Because the tin foil was greased the eggs don''t stick.

      They both can be heated in the microwave. I find that the breakfast burritos are best to heat on a paper towel to prevent it from getting soggy.

      For the breakfast burritos we love to add sausage gravy to them. (A white breakfast gray. This is a game changer!! 😋😍

      Hi Clare! On top of the scrambled eggs, I put pico de gallo which is like a fresh salsa (tomatoes, onions, cilantro, jalapenos or serrano peppers, salt, and lime juice if you wanted to make it yourself - I used a store bought one).
