    Ever heard of Bubble and Squeak? It's a British thing. It's usually Monday nights dinner using the Sunday roast leftovers. You mix the leftover veggies such carrots, cabbage, celery, onion, in to the mashed potatoes. Season as desired and form into patties. Dredge in flour and fry in a skillet with a bit of oil. Usually served with leftover roast or fried sausage. I was raised by my English grandmother so practically grew up on it. This reminds me of that.

    The problem you were having with carving the duck had to do with it being cooked upside down and then, served upside down. The breast needed to be on the top. That would have made it easier to cut the meat off of the breast.

    I live in the middle Georgia area. Back in the 90s, in April, we were having a typical gorgeous spring day. Temps were in the mid to upper 70s and peach trees were in full bloom. That evening the wind began to blow and the temperature dropped drastically. By morning we were in a full-blown blizzard! Something I'd never seen. We ended up with about 3 inches of snow! And no peaches that year.

    SWEETEST Couple EVER! This was a VERY interesting and informative vid! Thanks so much 4 sharing it with us! Terrible history about 'chimney sweeps'! Find it interesting how George Washington liked hot chocolate in the morning. A man of SUCH accomplishments...do we dare begrudge him that? LOL! I think it was a good idea really, as it gave the calories needed to take on the lifestyle he lead. Yes, chocolate in the morning! This show proves the 'strength' of a duck...small but 'mighty'! Kinda like Justine eh? Ron will be quick to chime in...'Oh Yeah!' Nice job on the spoon rack Ron! The talents U BOTH have and share will make your homestead a wonderful place...your present home is a fine example of what is to come. I simply don't know how U have the time to get at your land.     I am still laughing. “A Dorn in his butt!” I lived in Germany for 10 years, so I do speak German. And if I wasn’t loving you before, which I was (!), your recommendation for “Outlander” would have won me over entirely! Bless you both!! ❤️🙏 While I lived in Germany we always had candles on our Christmas tree. Extraordinary. The tricks to safety are ALWAYS having a person observing the lit candles ready to jump up and blow a candle out when it got low and also having a bucket of water in reach. In ten years I never experienced even a minimal “emergency”. I HIGHLY recommend doing this at least once, even for five minutes. MAGIC! ❤️

    You two are great - good sense of humors and beautiful people from the heart. I had duck once when I was child - we lived in Maryland and my parents to me to a real nice restaurant in Baltimore and was served duck - very greasy but was very good also from what I can remember. Love your show - need to watch Early American to watch the cooking of the meals. Looking forward to Thanksgiving video.

    I love you two! Thank you for giving me a smile today! I needed that so much! I have a recipe hint for you Justine, before you roast the Duck my great grandmother who was all French very Parisian , she would boil the duck to get the fat and Game taste out too.then she would roast it! Much less fatty, save the fat for other purposes. The potato balls with nutmeg is French put a bit of cracked pepper. I am 79 now that grand mama lived I.     I was taught to cut duck, turkey or chicken on a cutting board then place the meat on a serving platter. This made it easier to control while you cut. No chance of breaking your beautiful plate. Those potatoes look great & delicious. I love watching you cook.

    With duck you have to render the fat the best way to do that is with the oven on moderate to low place the duck on a rack in a roasting pan fill the pan half way with booing water and place in an oven for about two hours. Then crank up the heat to achieve crispier skin

    Great stuff you two. Did Ron really fall THROUGH the roof!?! That had to hurt a bit. I would say you should have a period correct Christmas tree (without stuff that will set it on fire.) The food here looks so amazing! I really enjoy the historical references and education here too. I can imagine it would be fun to have a period correct day/supper with you two.

    Trick to carving a bird is dislocated the joint and cut the tendons not the bones. You'll dull your knives cutting bone.

    Interesting - I never knew that was how the chimney was swept back then and it didn't have to cost you $250. I learned something new. You need a much sturdier fork, made of iron and maybe a sharp knife for carving. I've never seen anyone fight with their bird while eating before. Don't get hurt in the process. Ron, please be careful being on the roof and wear a mask when cleaning the chimney. That sounds like a death sentence doing chimney sweeping. Poor children. I am not judging Ron. I can tell that bird is tough to dismantle. Cool Christmas ornaments. Thank you for sharing so much with us. Have a Happy Thanksgiving!

    Outlander obsessed as well :) Spurred me to dig into geneology. Husband has since discovered Rev War ancestors and joined SAR - he's in the colorgard. We found out we had a mutual Rev War ancestor about 6 genrations ago.

    To keep the grease down on a duck or opossum boil it first for about a minute diiscard that water and repeat the process two more times; then bake as normal. This was my great great grandmother's method and she got it from her grandmother and so.

    I had orange duck at a Vietnamese restaurant and I liked it a lot. It was tasty and juicy. I felt kind of bad for the tree, it had to be questioning it's existence in life being shoved down a Chimney

    LOVE Outlander!! I started reading the books in the early 1990's. I love Loughaire (Fergus' wife). All the actors do a fabulous job. Love the tv series but the books are so much more. Have you read the books?

    People's conduct never ceases to amaze me! Sometimes, it can be just downright embarrassing. It seems like some folks just look for reasons to gripe & complain, even when the problem is not even close to being serious & has a relatively simple solution. In a world where there are truly major hardships, I just don't see any need to manufacture problems where there really shouldn't be any. I can't think of any scenario in which a spoon would cause such turmoil. Unless someone is using one to try & pop out a person's eyeball with it, maybe; but even then, it's not the spoon's fault. I think you guys addressed & handled the "Spoongate" situation very tactfully. I swear, wonders never cease! P. S., I really think Justine should definitely revisit the idea of writing a cookbook.
