Before the pandemic when pork was still cheap here in the Philippines, I made my own bacon and used a recipe that used celery powder. I used guava wood to smoke it and it was good but it was a bit salty for me. I couldn't try it again with less salt because pork prices now is too high (almost quadrupled) and I'd rather buy bacon from the store.
I am going to try this recipe using the oven as I don't have an outdoor grill. Looks so delicious. Thank you for sharing this.
