I’ve had esquites in Los Angeles, Houston and Tijuana, MX … and sir, you‘ve done a hell of a job!! This recipe respects the street Mexican corn lore, while adding that bbq gourmet flare. Thanks for the recipe!
Your love and understanding of Mexican Cuisine is quite commendable Chef Tom. If there were a Mt. Rushmore of kick ass Gringo Mexican food bad asses, you would be right there next to Rick Bayless.
You should leave the husk on because it leaves a beautiful smoky flavor to the corn, but it looks awesome I’m going to have to try this thanks for the recipe
I rub the corn with butter -> then apply seasoning to the corn and grill. really infuses the corn with the seasoning and then cut it off as above and mix.
That is a very fresh corn 🌽 side!!! Thank You chef!! I went to a private party with a female friend and I always go check out the food first lol I smell bbq I go over and they had Filet Minion on a stick!! It’s as though I was eating Cotton Candy 🍭 NOT SWEET BUT TENDER AS ALL GET OUT!! I ate like I was crazy drank a few. IPA’s looked around and to my surprise SUPER NICE CHUNKS OF SO TENDER BRISKET BURNT ENDS A REAL TREAT!! With that being said can you replicate these I guess Hors d’oeuvres?? I tryed getting tips but they was so busy. Thanks for listening 🙏🏾 Ps. They have something like a Cream Horseradish Garlic and Green Onion aioli OMG if you get the time the first thing I thought was ATBBQ and Chef Tom!!
Me (German) made it yesterday for my Mexican wife, delicious 😋!! Got me some extra credit. Thank you chef Tom for another great recipe!

I didn’t see an estimate on time for steaming the corn, either in the video or in the recipe. How long should they steam?
