How To Make Lomo Saltado

- Here's my take on my favorite Peruvian recipe: Lomo Saltado
Through some research i was fascinated by its origins and learned about a cuisine called Chifa.
**I realized I left out the integration of the soy sauce and vinegar in the edit! Just toss in the Soy Sauce and Vinegar after the tomatoes!
Ingredients:
1 lb Sirloin Steak
3 tomatoes
1 Red Onion
1 Jalapeno
4 cloves Garlic
2 pieces of Ginger
1 tsp Salt
1 tsp Cumin
1 tsp Black Pepper
1 tsp White Pepper
3 tbsp Soy Sauce
2 tbsp White Vinegar
1 tbsp Sesame Oil
3 tbsp Olive Oil

Excellent explanation of the origins of Lomo Saltado. Cooking it with a wok and using soy sauce are two giveaways of the Chinese influence, and in particular the Cantonese that immigrated to Peru in the 1850s. In a restaurant kitchen they let the flames reach the strir fry which gives lomo saltado its distinctive smoky flavor, but it's hard to replicate that at home without causing a fire. I'm Peruvian and the way I do it is with vinegar and soy sauce it gives it this "smoked out" flavor sooo good
Another Valentine’s Day, came back to make this recipe again! So good.
This year we skipped the grocery store and went to a specialty butcher for our steak! Got a really good cut of petite sirloin filet. The great steak really took this to the next level, my personal best Lomo Saltado.
It's funny how you I heard you acknowledge it just as I was going to write this comment: The tomatoes and onions should hardly get cooked for lomo, as one fellow Peruvian cook once said, you want them to be "al dente." I would throw them in as the meat is finishing to cook. I really liked how you started with the ginger and garlic and smiled when you said that you don't know any Cantonese that doesn't start with them. Not sure why that made me smile but it did. Will try that next time. Nice video!
I love this series because it’s basic but also looks very fancy. You use very common ingredients.
I’ve made this recipe at least 2x times in the last 2 years. Valentine’s Day is around the corner so I had to come back and get the same recipe again. I’ve tried other Lomo Saltado recipes, but this one is so good and uses locally available ingredients, so I keep coming back.

Casey how do you cook your brown rice? I've heard some cook theirs by adding 3-4 cups of water to a cup of rice and then once the rice is cooked they pour the water out. I think that would make it rather flavorless
