@@P0werC4t Prawn head contains few main organs including the brain and ovaries. The orange part we are using for “roe sauce” here is the ovary which consists of mostly fats and cholesterol. Technically it’s called tomalley and is similar to the green stuff you see in lobster head after it’s cooked. It’s full of flavors and considered delicacy for many people :)

Where do you get the roe from?
You can get the roe from cutting upper part of prawn’s head after removing the shell. I have detailed direction in the description of this video :)
