In California prime rib roast is running 33$ a lb for 5-7lb roasts .. or 15$ a lb for a choice standing rib roast .. it can go as low as 6-8$ a lb on sale for a choice or select standing rib roast .. prime is obviously much much better than choice but if you prepare it properly a choice standing rib roast can be tender, tasty and you pretty much are the only one who knows it’s choice not prime .. but ya gotta prepare it properly .. if I age my choice roasts they get much more tender..
One of the best ways I’ve prepared standing rib roast was to pack it in rock salt and put in oven.. once I did a roast that way years ago .. that’s how I always do it now .. prime rib packed in rock salt .. you gut to season the roast heavily with fresh herbs garlic pepper and salt before packing it with rock salt .. so delicious and melt in your mouth tender packed in rock salt and roasted that way.
cooking time is hard to say cause it just varies so much besides that its much more reliant to just keep the temp in check, for that temp i would say 5° celsius higher should do for a medium.

Lots of connective tissue on the bones. Or just include a pork trotter with your beef bones-gives you gelatin for days.
