We always book on the Renfe website but tickets are usually available only 2 months in advance. So if you are booking any later than for the first week of October it won’t show.
To buy a ticket and have good selection on departure and return times, you'll need to purchase tickets 3 days in advance. Same day purchase options are very poor. This is late May 2024. Also, I found the ticket kiosks not useful as the ones I tried would not accept credit cards. Instead go to the RENFE ticket office in the botanic garden in the old terminal.
Yes, we would always recommend people book ahead of time. Sorry to hear about your problems with the ticket machines. We generally seem to be alright with cards in Spain, although the odd time it doesn't work in McDonald's for some reason.

We paid on card, 7 euros each. Just before the train started running, the sales people were setting up in the main square and we bought the tickets from them.
Los que vais de excursión, de Madrid a Toledo, o a cualquier ciudad cercana, como Segovia, Ávila, sé que por la falta de tiempo, no os da tiempo a ver nada, de la ciudad que visitáis... Y es una pena. Hay tantas cosas que ver, y disfrutar, por ejemplo en Toledo, que es en la ciudad que yo vivo. Que me da apuros ver a turistas, ir corriendo de un lado a otro, sin disfrutar de sus calles, ni de sus monumentos, en la que más de la mitad, ni siquiera entran a verlos. Un consejo para los que estéis interesados en visitar ciudades, en excursiones de simplemente unas horas... Por favor, no hagáis esto, por lo menos, quedaros un día completo, disfrutar también de la noche, o quedaros día y medio o dos, por lo menos así, podréis disfrutar con más tranquilidad de todo lo que vayáis a ver, y ver muchísimas más cosas, que merecen mucho la pena, y que os dejáis de ver, por tener que iros, ya sea en el AVE, Bus etc, tenéis un horario, para poder volver a Madrid... Así que cuando puedas y quieras volver a Toledo, por favor, ve sin prisas y visita muchos de sus monumentos, museos, recorre sus calles, disfruta de sus magníficas vistas nocturnas... Y así, sí podrás decir que has conocido en su totalidad Toledo, o cualquier otra ciudad, un saludo de una madrileña que vive en Toledo, y que espera que vuelvas otra vez a esta ciudad, y que la puedas disfrutar con más tiempo.

What other 1 day trips do folks recommend also from Madrid please?
I also recommend Segovia (we have a video on that too if you're interested). And there's also El Escorial and Ávila. Lots of options.

I would recommend getting lost in the old city instead of the train.
I agree with this. It's just that we didn't have much time in the city, so had to pick some quicker options.
