I love candied yams! I like to put walnuts in the food processor to grind them down a bit then when the yams come out of the oven sprinkle the walnuts over the top. Yummy!

I cook on a wood cook stove during winter. I use the same recipe put in baking dish and set it to the side where they cook very slowly while I'm baking the turkey and trimmings. Maybe they steam I'm not sure. Anyway I have achieved the same results putting my oven on the lowest setting and baking them over night covered. Amazing.

Most of the time when you buy a yam it's simply a different variety of sweet potato, actual yams are a different thing entirely, and are more fibrous, starchy flesh

If not sweet, not good Yam = dry rough and almost woody skin, think tree bark. Yellow or white flesh. Very fibrous, not sweet at all, very starchy and filling, can have slightly bitter note/aftertaste

Yummy! I make something similar, but with butternut squash. Cinnamon, allspice, nutmeg, ginger, and maybe a little cardamom. Walnuts and/or pecans. Of course butter and brown sugar Splenda (diabetic). Always an amazing treat.

Found this on google about yams. Most vegetables labeled as a “yam” in US supermarkets are actually just a variety of sweet potato. Real yams are entirely different root vegetables that are more like yucca in texture and flavor. They have bumpy, tough brown skin (that looks almost tree trunk-like) with starchy, not sweet flesh.
