Hi Scott! That has happened to me more times than I care to remember! There are a couple of things I look out for now. I make sure the chocolate has fully hardened. Sometimes there might be a small spot that has not fully dried and it sticks to the bauble and breaks away when the bauble is opened. Also, I like to add a bit of extra chocolate to make sure the chocolate shell is not too thin and fragile. Finally, I will let it dry for longer and when I bring it out of the fridge, I will let it sit for a few minutes before I open the bauble. I really hope these tips help. You can use any kind of mousse you like. I have a delicious Red Velvet Mousse on my channel and a lovely Chocolate Mousse as well. A video for the strawberry mousse recipe is currently in the making. :-)

I'm so sorry to hear that :-( They can be a tricky thing to make. I also have had a lot crack. The chocolate needs to be tempered OR you can use Nestle’s Bakers Melts which is what I use or Candy Melts. Once the chocolate has been added, the bauble closed up and the chocolate evenly spread, I like to twist/rotate the two halves to free the seams from any residue chocolate. Before you open them, have a good look at the bauble to make sure the chocolate has fully pulled away from the plastic before you attempt to open it. It also helps if the coating isn’t too thin. First attempt couldnt get the bauble out, then it split in half, 1 side almost perfect the other side wouldnt come out at all :( putting less chocolate in for attempt No.2

Thank you... I will try it again, but i left them in the fridge for almost 1 1/2 hour. It was tempered and not warm :-) Do you put something in the melted chocolate or is it only chocolate ?

I'm not a fan of the tempering process either! I like to use Nestle's Dark Bakers Melts...no tempering needed! ;-)
