    BBQ Chicken & Pineapple Salad
    Servings: 1
    Cal: 481
    BBQ Chicken
    1 tsp vegetable oil
    1 (4-ounce) boneless skinless chicken breast
    ¼ tsp garlic powder
    ¼ tsp paprika
    2 Tbsps barbecue sauce
    Salt & freshly cracked black pepper to taste
    Brush chicken breast with oil & season with garlic powder, paprika, salt & pepper to taste. Grill over med-high heat until it releases easily from the pan, about 4 to 5 mins. Flip chicken & continue to grill until it releases easily from the pan, another 4 to 5 mins. Brush chicken on both sides with barbecue sauce & continue to cook until it reaches an internal temperature of 165ºF.
    Ham & Pineapple Salad
    2 cups chopped romaine lettuce
    1/2 cup diced pineapple
    1/8 cup diced deli ham
    1 Tbsp sliced red onion
    1 Tbsp ranch dressing
    Add romaine to serving dish. Top with pineapple, ham, & red onion. Place ranch dressing in a small container on the side. Top with barbecue chicken breast.
    Vegetarian Mediterranean Meal Prep
    Servings: 1
    Cal: 565
    Vinaigrette
    1 Tbsp olive oil
    2 tsps red wine vinegar
    1 tsp chopped parsley
    Salt & freshly cracked black pepper
    Whisk ingredients & set aside.
    Mediterranean Salad
    1 cup cooked orzo
    1/2 cup diced cucumber
    1/4 cup diced feta cheese
    1/2 cup canned chickpeas, rinsed & drained
    2 Tbsps sliced Kalamata olives
    1/2 cup halved cherry tomatoes
    1 lemon wedge
    Place your orzo into a serving dish. Top with remaining ingredients & pour over the vinaigrette.
    Dijon Salmon & Potato Salad
    Servings: 1
    Cal: 553
    Lemon Dijon Vinaigrette
    2 Tbsps olive oil
    1/2 lemon, zest & juice
    1 garlic clove, grated
    2 tsps Dijon mustard
    Salt & freshly cracked black pepper to taste
    In a small bowl, whisk all ingredients together. Use half of the vinaigrette to marinate the salmon, & the other half to dress potato salad.
    Lemon Dijon Salmon
    1 (4-ounce) salmon fillet
    Lemon Dijon vinaigrette
    Preheat the oven to 375ºF.
    Brush salmon with lemon dijon sauce & place on parchment lined baking sheet. Bake until cooked through, 12 to 15 mins.
    Potato Salad
    1 cup quartered baby potatoes, steamed
    1/4 cup seeded & diced cucumber
    1/4 cup diced celery
    1 Tbsp chopped parsley
    1 Tbsp chopped chives
    Half of the lemon vinaigrette
    Salt & freshly cracked black pepper
    In a large bowl, toss together potatoes, cucumber, celery & pour over the remaining lemon dressing. Season with herbs, salt & pepper & toss well.
    Smoky Vegan Burrito Bowl
    Servings: 1
    Cal: 567
    Smoky Chipotle Black Beans
    1 tsp vegetable oil
    1/4 cup finely minced onion
    1 garlic clove, minced
    1/2 cup canned black beans, rinsed & drained
    2 Tbsps salsa
    1 Tbsp minced chipotle in adobo sauce
    1 tsp agave
    1 Tbsp chopped cilantro
    Salt & freshly cracked black pepper
    In a small skillet over med-high heat, heat vegetable oil. Add onions & cook until they have softened, 2 to 3 mins. Add garlic & cook until fragrant, about 30 seconds. Add black beans, salsa, chipotle in adobo & agave. Season with salt & pepper to taste & cook until beans have heated through, about 2 mins. Stir in cilantro.
    Corn Salsa
    1/2 cup corn kernels (fresh or frozen)
    1/2 lime, zest & juice
    1 Tbsp finely diced red onion
    1 Tbsp chopped cilantro
    1/4 tsp ground cumin
    Salt & freshly cracked black pepper
    In a small bowl, toss together corn, lime zest & juice, red onion, cilantro & cumin. Season with salt & pepper to taste.
    Sides
    3/4 cup cooked brown rice
    1/4 avocado, sliced
    Garlic Shrimp & Green Bean Salad
    Servings: 1
    Cal: 525
    Lemon Garlic Shrimp
    1 tsp oil
    1/2 cup shrimp, peeled & deveined
    1 garlic clove, minced
    1/2 lemon, zest & juice
    Salt & freshly cracked black pepper
    Heat oil in a skillet over med-high heat. Add shrimp & cook for 1 to 2 mins. Add garlic & continue to cook until shrimp is cooked through. Add lemon zest & juice & season with salt & pepper to taste.
    Green Bean Tomato Salad
    1 cup trimmed green beans, steamed
    1/2 cup halved cherry tomatoes
    1/4 cup diced feta cheese
    1 Tbsp minced shallot
    1 Tbsp olive oil
    2 tsps lemon juice
    Salt & freshly cracked black pepper
    In a large bowl, toss together all of the ingredients.
    Quinoa
    1 cup cooked quinoa

    I love that these are so simple that they are easy to customize. For myself, I will add items like Avocado and tomato and leave out the cheese and ranch dressing.

    Hi ,I just discovered your channel and I have to say, I haven't seen anyone on youtube make their meals look as beautiful and appetizing as you do. I'm a flight attendant so I struggle to cook and prep meals that I can carry and that will last me for 3, sometimes 4 days while I travel and I'm away from home.. Do you ever take the food you make to go for a long period? have you traveled with these meals you've made and carried them overnight? Any tips you can give me I would appreciate it.     I love this meal-prep video, and the previous one. Almost makes me wish I was still working...nah, I like being retired! I can't wait for warmer weather to make your salads (I do salad prep in the summer for days when I know I'll be way busy) and I already cook chicken and beans in bulk, with some type of starch to go with....wow, these do look good!

    I always meal prep on Monday's - the day before chemotherapy. Tomorrow is my last chemotherapy for my Triple Negative Breast Cancer (stage 2B).     I love this episode, so many vegetarian/fish options! I was so inspired that I immediately made a potato/cabbage/cucumber salad with pangasius, inspired by your potato salmon salad. (Used mustard, oil and sweet chilisauce as a dressing because I didn't have the other ingredients, but it turned out really well.)

    Made the second dish forfeit the chickpeas added shrimp cooked them in olive oil garlic and lemon juice...and tossed the orzo in olive oil parsley and lemon juice... yummies 😋

    That salmon potato dish looks...dill-icious!
    I couldn't resist. In all seriousness, I cannot WAIT to make that mediterranean dish! It looks SO GOOD. Just sucks that I'm allergic to cucumber, I'll have to leave it out :( I love cucumber too. But I really like that you could switch it up a lot by switching out orzo pasta for rice or even quinoa. Loving these meal preps!

      I considered it, but I'm not a huge fan of zucchini. I usually only like it grilled with a ton of seasonings. But thank you for the suggestion!

    Just made the "smoky vegan burrito bowl" but added chicken as well (mostly I am making a batch of it for a week, and my serving sizes didn't quite come out large enough so I added more protein to help). It smells amazing and if it looks half as pretty as yours when I assemble it for work tomorrow, I'll instagram it :P

      Lenora Dorsey she always does her best to include a vegetarian friendly option that you can omit the dairy from and her recipes are always seem pretty simple to swap out the meat for an alternative. But I do agree that a creative vegan meal prep would be great to see from her!

    The one with bbq chicken actually sounds really good down to the core for me. And I don't like salad, and I don't really like veggies in general either. But that one I will actually try. I think that the romaine lettuce do much for me in this one, since I hate iceberg lettuce. Too much water and it easily taste funky to me. Well done, you actually inspired me to make an actual salad!

    Looks delicious as always! Unfortunately, I do find feta problematic for meal prepping. If I add it straight away to the meal, it tends to go bad quickly :(

    My New Years resolution is to make lunch to take to work as I would always just buy pre-packaged sandwiches which are neither cheap or that healthy! I love every single recipe in this video and I’m now so excited to try them all and succeed in my resolution! I also love potatoes and don’t understand why people give them a bad rep! They are healthy, filling and so tasty!

    I tried the Mediterranean Salad and it was delicious! I'm not a lettuce fan either, so this one worked for me! I didn't have cooked orzo on hand, so I subbed with quinoa. I can't wait to cook up some orzo for tomorrow's version!
