- This one has been on my list for a while now. I came across a discount gallon of whole milk at Food Lion and decided it was time to try out making farmer's cheese! It was an easy and fun project that I will definitely be doing again.

The biggest reason I like your channel is that you don't complicate things. Whether you're making pierogis, bagels, cream cheese or anything for that matter you make it simple and easy to duplicate. I live in a small town with only a couple of mom and pop stores so milk sells out quickly and is rarely on sale, since cream cheese has become so expensive it will be worth it to make this even if I have pay full price for the milk.
You really go that extra mile in showing people how to do different cooking techniques . Looks good .
Never in history has anyone ever done so much with a gallon of milk. I'm very inspired 😊 I honestly want to make bagels and that cheese now.

I'm always AMAZED by what you come up with. It's possible to eat really well on a tight budget. For those with kids, all of these recipes would be so fun for kids to get involved with. They would love the bagels, especially with cinnamon and sugar on top or in the cream cheese.

I love making homemade cheese! I started with farmers cheese, then moved onto things like cream cheese, ricotta and mozza. I’ve tried cheddar but have yet to master it, but I know I’ll get it eventually!

Who knew making cheese was so easy....or bagels. Or alot of your recipies. I have made bread before, and love the making. The smells of bread baking or other home-baked foods is so comforting and lovely.
My Grandma used to make cheese this way and wrap in smoked banana leaves. Something so simple and so delish. If you buy Greek yogurt you can spoon some into the cheese cloth and drain it you’ll have cream cheese. Great seeing your video.

My grandma used to make cheese from fresh milk from the cows. I never watched her do it because kids usually prefer playing outside to cheese-making. But I wish I had, now. I am going to try making cheese in future. I don’t like all the additives in store-bought cottage cheese.
Cheese is always one of those things that seems magical to me, even though I've made ricotta and farmer's cheese before. Each time I try it, it feels like I'm cheating. And all the great breads you did with the cheese are great, as well.

Lisa, the Food Lion on Wake Forest across from the Lidl has the lowest egg prices in the area. A 30 count is still $2.91 but I hold my breath wondering when the price will jump. I have 2 in my fridge. Loved the video. Whenever FL has discounted milk, I make cheese as well.

Great job! I like making my own butter from heavy cream. I am about to make a pizza crust using your recipe.
i made this cheese, but I used a gallon of whole milk, 1 cup of whipping cream, and a cup of half and half, heated the mixture, then added both white vinegar and lemon juice, and salt. It was very tart, didn't get the curds at first, so I reheated it, and they were loose curds, not solid. I let them drain in a towel with layers of paper towels over a pot with my lined strainer. It sat for several hours, before i took it out, drained more liquid, and placed in a paper towel lined container in fridge overnight. Mine has the texture of mascarpone cheese, slightly sweet and a bit salty. It's wonderful.

From my experience (I make cheese using goat milk), just add 6 tablespoons of vinegar to one gallon of milk, but the temperature needs to be higher than 200 F, let the milk gently boil until the residue has completely separated, it should have a clear, greenish color. From your video, it seems that the fat has not completely separetad into curds, that's why the residue is still white 😊❤❤❤
Hi Lisa, if you would’ve left the cheese as is, it would’ve been queso fresco or fresh cheese which is delicious and me being stationed in Germany it’s a delicacy and rare item. When I see it in the Commissary I snatch one up because I’m too lazy to make it… there’s plenty Mexican dishes I use this for.
-Enchiladas because I’m Mexican and I eat my enchiladas the traditional way with queso fresco.
-Taquitos de queso (rolled up fried tacos stuffed with queso fresco)

Great topping for

-tostadas
-beans
-quesadillas (masa made quesadillas stuffed with anything you like and topped with queso or you can just use regular tortillas, stuff them with meat or whatever, and top them with queso, lettuce, salsa, cream)

When you said by accident adding tomatoes to the blueberries in the cream cheese. I first cringed but then I said trust the process it might be good😂 I was totally on board. I never see milk on reduced, I see meat and bread but never milk. That was a fun thanks.

Great Video!! From the cheese curds you can make an Indian cheese called Paneer. I like to use lemon juice for it. After you drain the whey.. Keep it in the cloth and weight it down with a plate and a weight on the top, like a can of tomato sauce. The next day you can cut it into cubes and use it in various Indian dishes. One of the really good ones is saag paneer.

Yay! I l Ike your videos before I even watch them. I was just thinking about this today - I have several gallons of raw milk in my freezer for making cheese. And with the latest news that big Pharma is about to put out their version of rennet, I wanted to find a way to make cheese with lemon juice or vinegar. Thank you, Lisa! Love your videos.
ETA: Totally agree about expiration dates. Full-fat dairy - milk, cream cheese, cottage cheese, sour cream, etc. - lasts wayyyy beyond the Best By date, even when opened. I always buy the clearance if it’s available.

Fun experiment to watch. Did you add baking soda to your water when boiling bagels? I’ve not made bagels yet but love the English muffins I’ve been making. Eggs…. Lisa, that’s almost exactly how we drained our cheese back on the farm, hanging from the handle on the upper cupboard. We used mostly skim milk to make cheese and I don’t think we got it quite that hot but that was many years ago for me. I remember my mother testing the temperature by putting her bare hands on the outside of the pot. When it got too hot to hold your hands there, it was the right temperature. Also, the whey was much more clear but slightly yellowish - just how it looked after your second cooking. 😉

Of course, eggs are up... they will be sky high until after easter. They will give some excuse but they know that people will pay whatever they ask because of easter.
In my area, eggs are always on sale the week before Easter.
