    Success story: As soon as I finished your video I hurried to the kitchen and made my own cottage cheese. I have a few old #10 cans of non-instant powdered milk left from 2006 that I use every week for bread making. I chose to use lemon juice and then 2% milk for the additional liquid at the end of the process because that's what I had on hand. Wow! Amazing texture and taste! Thank you so much for doing all the preliminary experimenting.

    Thank you for making this series. When I rotate my 3-day emergency supply in May (which I built after watching your videos), I will try doing all of this with the 16oz of powdered whole milk I have stashed there. I am also in the process of trying to sew a wonder bag for myself. My first attempt failed but I will try to use an insulated grocery bag for additional warmth.

    Not cheese related, but I made frozen yogurt using your yoghurt recipe, to greek yogurt with some sweetner and blueberries boiled to make a syrup and a hand full of crushed nuts, Yum! Better than ice-cream.

    I think this is good to know because who in heck want to made a special trip to the store if you need cottage cheese and you don't have any on hand. Shelf stable powdered milk is an easy kept pantry staple. 👏👏👏Bravo!

    I made farmers cheese usubg those shelf stable boxed milks. The curds are very small.

    Yes! This is awesome. I'm going to try it. Have you considered using Kefir grains to make fermented milk? I have made it using whole milk, it turns out very nice, like a yogurt drink. I've added fruit and honey and blended (after removing the grains). Kefir grains eat up the sugar in the milk and helps with digestion for those with a lactose intolerance. I just recently used my Kefir grains in powdered milk, and they work great! So I've also been experimenting with making Kefir sourdough bread. It took a few try's but I've made 2 good loaves of sourdough bread with Kefir milk. No yeast!.

      When I was in a Chef Training program in the late 1960s, forks were required for the same reason. I still use a fork when stirring eggs for any purpose. Jim

I wonder if this would work well for Kefir! I just started Kefir journey & I am currently needing to buy about a 1/2 gallon of whole milk once a week.

    I can’t wait to try this. Thank you so much! AND a side note, I found 4 of the blue sealed storage bins you demonstrated full of Christmas decorations. Im so excited to change them out and use those for food storage. They are expensive now!

    Curiosity only.....I wonder if it would break up quicker if you used a pastry cutter in a shallow bowl? Just wondering.....I am going to try making cottage cheese now. Thanks for the videos

    I thought sqeaky cheese was just a kansas term for young chedder curds...lol apparently it is a more wide-spread term .lol

      Cashe Valle Cheese here in Utah prides itself of its squeaky cheese, so I guess it is quite well knowl! LOL

      @RoseRedHomestead Kansas has a tiny little town northcentral area called Alma, has a creamery..known and prided on it's cheeses, always a treat to get squeaky cheese curds there...lol.

    I love your videos and thank you for the wonderful information that you give!
    I have noticed that there is a little more movement on the way the person behind the camera is filming, I struggle with motion sickness and this is making it hard for me to watch your videos lately, I get headaches and start feeling sick, is there a way to have the less movement? I really don’t want to stop watching your videos as I truly do love the information you give! I’m sure I can find my own information, but most of the time you give me information I didn’t know I needed 😊, I’m also a visual learner and love to see how you do the work. Thank you again!

      Yes, sometimes that does occur. I have a stabilizer in the lens of the camera operating. But, sometimes when I move forward or backwards on our slate floor(which is uneven in places) it causes balance problems for me. Thanks for the comment. Thanks for watching our videos. Jim

    After you washed the cheese and started to add milk, did you use powdered milk or regular milk to make it creamier? I have the same gag reflex as you do when it comes to powdered milk.

    I'm enjoying this series. I had a question. At the end you added milk. Could you use the whey or make more powdered milk? I'm thinking if the grid was down, then you may not have milk.

      You can really use whatever you wish. I thinned it with some homemade yogurt for my last batch and it worked great.

      @RoseRedHomestead would evaporated milk work to thin it down? It is something that gets used only a couple times a year, at my home...mostly for pumpkin pie....but something I always keep on hand., as well as some nonfat dry milk..

    I like cottage cheese with cream added. In the store it says 4% milk fat.

    Any recommendations on best place to buy powdered milk? Also, would this cottage cheese recipe be good made from fresh whole milk from the grocery store?

      We buy ours from the LDS food storage center or on Amazon from Augason Farms--it is called Country Fresh. It might be in our Amazon store.

      I have freeze dried full fat milk and it does not reconstitute into a smooth liquid--stays with lumps of butterfat. So I did not try it for these recipes.

    Curious if you tried it with just the whey. Or powdered milk, or a combo of both . In hard times you may not have regular milk.

    What is the difference in making the cottage cheese and the ricotta ? I have seen many people make ricotta using milk and vinegar ... with the same ingredients you just made cottage cheese with ...

      Yes, exactly. I added a bit of my home made yogurt to moisten my current batch of cottage cheese so the taste is a bit different.

    Please, never ever wash the curds under chlorinated tap water. Leave them moist and soft with their own whey. No need to add milk. Use oil, batter, cream, salt or pepper to taste.
