Oh I didn't know it was called "pith" 😄 You learn new things everyday. Yes it's true. We candied our pith, and boiling it 4 times removed most of the bitter taste. It still had some, but it was pretty pleasant. Next time we'll do a video about it too, didn't think about it when we made this one.
Haha yeah, special delivery from Sicily. This one weighed 1.35 kg, a new record for us. It tastes pretty much like a lemon, it's a bit sweeter / less sour. Let's say a very good tasting lemon. The best part is the the white rind though, it can be eaten as it is, candied or even in a salad. Very versatile fruit, I love it.

How long to cook on low heat? And how long will the jam last in the jar? Should it be refrigerated?
