Vegan Zuppa Toscana
1 package (4 links) Beyond Sausage
1 white onion, diced
4-6 cloves garlic, minced
1 head kale, de-stemmed, chopped
3 medium potatoes, peeled and cubed
7 cups vegetable broth
3 tablespoons sweet rice flour (or use all-purpose)
1 cup unsweetened plant milk
In a large stock pot, brown sausages and break up into crumbles. Add in onion and garlic and sautée for 3-5 minutes. Add in kale, vegetable broth and potatoes and bring to a boil. Reduce heat to low and simmer for 15-20 minutes, until potatoes are tender. Whisk rice flour into plant milk (you can use all-purpose if you’re not eating gluten-free). Pour slurry into soup and stir to combine. Increase heat and bring soup to a gentle boil. Allow to boil until thickened.

My favorite soup of all time is just a plain brown lentil soup that my dad makes. He's Lebanese so it definitely has that flavor to it but he always makes it super simple. Basically sautéed onion, big chunks of carrot and celery. Then adds brown lentils, mixes that through and adds water, salt, pepper and cumin. Boils until the lentils give the soup thickness. It seems so simple and like it wouldn't have a lot of flavor but it's so delicious.
Sounds so good. I love lentils, everything made from lentils is so hearty, savoury and so good.
I make this almost exactly the same but I never put cumin in it. I will give that a try! Yum
Here are some soup ideas:
potato and leeks
pumpkin and carrot soup
carrot, coconut and chili soup
miso soup
minestrone (tomato-based or clear)
Those are such good ideas. I would also throw in split pea curry soup, tomato soup and mushroom hummus soup (basically cream of mushroom soup with hummus instead).
If you add some non dairy milk to your tofu scramble it helps with the dryness and makes it a bit more creamy like scrambled eggs!! (I use a splash - 1/4 cup)
My favorite soup I make is a vegetable lentil dal soup. I add barley to it as well and you can do frozen or fresh veggies with red lentils and coconut milk. Spices are turmeric, coriander, cumin, paprika, garlic. It's so delicious and great for when you're sick!
I’ve been on a soup kick recently!! I made a coconut chickpea stew last week and tonight I’m about to make tom yum soup, a spicy Thai soup. It’s PERFECT for when you’re sick
I've been sick too girl! And still am, in fact I had to take the day off to rest some more. I hear you with the soups! I made a delicious lentil soup earlier in the week for a friend who just had a heart attack, then I made tomato soup, and I also bought some Amy's Coconut Lemongrass soup because that is what I always want when I have a cold. I've also been consuming those little instant Miso Cup packets. I love those for breakfast when I'm not feeling well because they are just simple and nourishing.
Those kale stalks could make a great ‘bony’ treat for your pup :). Cannellini beans would have been awesome in your kale soup too. I veganized Italian wedding soup lately and it was the bomb!
There’s another soup from Olive Garden that you should try to make vegan! It’s the chicken and gnocchi soup, I haven’t had it in years but I remember it being amazing

A couple years ago I got so sick I couldn't come out of bed. I was doing so poorly that nothing was helping me. In a last ditch attempt, switching to full vegan and doing acupuncture not only helped. It saved my life and I felt much better almost immediately after weeks of torment.
You should try the veganized recipe for my grandma’s white bean + green chile soup!
1 large white onion, diced
8oz diced green chiles
1 tsp red chile flakes (or more 🤪)
6tsp your fav taco seasoning
1-2 russet potatoes or 5 gold potatoes (pealed and diced but i like keeping the skin on)
3 cans drained and rinsed great northern/white beans
1 bag of Daiya cheddar shreds
Veggie/vegan chicken stock to cover
Optional: your fav vegan chicken substitute, but I like to add a package of soyrizo!
Sauté the onions, chile flakes, and green chiles (and soyrizo if using) in oil or butter, then add everything else, cover with the stock, and cook until the potatoes are tender :) easy peasy! It’s SO wonderful on a cold evening. And I love how simple it is. I hope you try it out!
Those recipes look awesome! Must try them out as i have the ingredients for both. I was down for two weeks with that nasty bug and I'm still battling residual issues. Like you, soup and citrus fruit were my staples throughout. I had some carrot soup in the freezer which I heated up and ate for breakfast! Then i dumped a bunch of veggies and seasonings into a pot with spaghetti and created a veggie-noodle soup (did this twice). Will eat the last of it tomorrow. So good!

Saute an onion and garlic in pot
add 2 boxes vegetable broth, 1 can great northern beans , 1 can cannellini beans, chopped kale and turnip greens( I use hand fulls) and 1 cup of Bob's red Mill vegi soup mix. Cover and let cook (around an hour). Goes great with a toasty baguette
Also adding hot sauce in once it's cooked up is delicious! I hope you get a chance to try this! Sorry for the sloppyness of the recipe...not a professional vegan TH-camr 😜

Lentil and vegetable soup. For the vegetables I use potato carrots spring onions and a red onion spinach whole bulb of garlic. Seasonings of smoked paprika cumin coriander turmeric cinnamon chilli flakes garlic powder soy sauce vegetable stock tomato puree can of coconut milk full fat and salt and pepper. Juice of one lemon or tw0. Dash of maple syrup. Top the soup with toasted pine nuts a dollop of natural yoghurt or oatly creme fraiche red onions soaked in apple cider vinegar fresh coriander and some sriracha. Thank you Sarah and healing hugs. Recipe inspiration from simply quinoa on TH-cam with some added extras.
Cheezy leek soup is awesome. I think it's a German thing. The original has bacon bits in it which I usually replace with diced smoked tofu.
One of my all time favorites is an "anything you have coconut curry soup". I cannot remenber what blog i found that recipe on. But i you look for it on pinterest it should come up.
My bf loves this random soup i threw together once. It's just vegetable stock, some pasta, spinach and cubed herb tofu. Apparently it hit the spot. 😄
I always make butternut squash and carrot soup.
I roast the veg with seasoning in the oven and caramelise a whole onion in the frying pan then blend it all together with vegetable stock. And thin it out with a bit of non dairy milk. It’s so good. Sometimes I add extra milk to thin it into a sauce to put on pasta too, kind of like a mac and cheese vibe 🤤
Give the kale stems to the puppy! We give our Golden the kale stems, he loooves them! X
Lately I've been enjoying my soup creation based off of hot for foods dumpling soup. I just thrown whatever vegetables I have in and make her dumpling recipe with chick'n strips and Italian herbs + ground sage. I've also made a minestrone inspired one with lentils and barley
Zuppa toscana is completely different from the one you cooked (that looked amazing anyway). I'm from Tuscany, I know few soup recipes if you are interested and most of them are vegan because they are old recipes. In the past people could not afford meat. :-)

My current fave soups are Carrot and peanut, Sweet potato-lentil with cinnamon, nutmeg and all that jazz + laksas! So cozy and delish during the colder months
Olive Garden's Minestrone soup is already vegan, as long as the grated cheese add-on is declined.
The scrambled tofu can be made to more resemble scrambled eggs by adding a half teaspoon, or so, of turmeric powder.
Using vacuum packed tofu is what I always use for a tofu scramble. It's the only type that I have not destroyed a pan with and I don't have to press it. I too love sprouts. They have the best sales!

The zupa toscana soup is also very good in the instant pot and I used canned coconut milk instead of cream and it was absolutely delicious. Something that it's missing that you didn't include is chili flakes. Delicious!! Try it out in the instant pot. All you need to do is add the kale in at the end when it's done and let it sit for a few. :D

Great video! Soups or stoups are my favorite and usual go too! I work 7 days a week and it’s so easy to just turn on the crock pot or soup kettle. Btw, you should try unstuffed pepper or cabbage soups.
i make zuppa all the time!!! i actually use the ripple plain half and half and it turns out so creamy and delicious 😇 i use spinach instead of kale though because i hate kale lol

I kinda eyeballed it one whole onion, a fuck ton of garlic, beyond sausage, kale, broth, navy beans or even chick peas would be good, and salt and pepper. I also added chili flakes.

I've been wanting to make zuppa toscana actually. Just kale and potatoes sounds amazing for the chilly 62° san Diego weather we've been having 😅 actually had to wear a sweater yesterday it was crazy!

The reason for avoiding those restaurants is they don’t make their food in the restaurant. Everything is delivered & microwaved, or at least that’s the case with Olive Garden...go to Carrabbas is you want fresh Italian food. They even have a vegan pasta sauce & I will get pizza with no cheese, a bunch of veg & lite balsamic dressing, yum! They would most likely let you bring vegan cheese to put on though. My husband was a manager for them & now for outback. We avoid many restaurants also because he works in them, also their grade must be an A or we will not eat there. ❤️

Always love your videos!!! Try Carrot and Ginger... GREAT for when you are sick. You can add in some turmeric. Potato Bacon is great too... Of course, using the cruelty free bacon. Ohh... you should make a beer cheese soup. (Check out Julian's beer cheese sauce maybe and turn it into a soup? )

Glad you're feeling better. My go to soup right now is Minestrone done in the Instant Pot. I got the recipe from Jeffrey at pressureluckcooking dot com. He's got a video of it here on TH-cam, too. Same channel name. I call it "health in a bowl". So good.
