    Awesome, I try to show people not to waste what they catch on my videos. Your video is a great example of how to use all the fish. I think some people just don't like how much time it takes to process a fish, but it's so worth it 👍🏾

    I use the frame meat for fish tacos. Cook it, scrape it off with a spoon, add it to a salsa. Tu Meke.

    I'm very impressed with the lack of waste, fish are a limited resource, I don't think I realized how much is being thrown out until watching this.

    I literally did this last Saturday with a 4-5kg snapper I caught on Friday arvo. Fed 6 people on Saturday and I had a massive lunch on Sunday.

    rare sight indeed, minimal wastage (Y) (Y) (Y) spot on with the skin. steaming fish maximises access to succulent meat, followed by soups, stews, curries; then baking, frying and grilling. this absolutely merits sharing more than the other wasteful ones.

    I would cook that big juicy head in Thai Tom yum soup. We love big fish head in Thailand and there are restaurants specialised in just cooking the fish head. In my opinion, the best part of a fish are belly part or what you call in the video “the wing” and the head.

    There's a tip for the making fish soup. Pan fry the bones and head first then fill it with boiling water. The boiling water is the key. It will make the soup white like the milk and no fishy at all.

    love the video...just wondering how is it that there is less bacteria than it being washed?

      When the fish is intact there is basically no bacteria in the meat, bacteria mainly lives on surfaces. As soon as you filet a fish you make a lot of new surface area by cutting into the meat. Everything after that depends on how much "new" bacteria gets in contact with the fresh surface area! Freshwater has some bacteria but cleaning saltwater fish with freshwater has a negative effect on the filet quality because of cell osmosis (difference in salt contents) making them break up. Using saltwater is better in this regard but has a lot of bacteria content itself which you in turn introduce to your nice filet surface area. If you manage to filet with only the clean blade touching the meat, thats the best you can do as is demonstrated here!
