When I make mine I shred it fine, salt it(non iodized), kneed it and use caraway seed(about 1tbs per gallon) and let it sit for 3 months. My 98 year old German grandmother loves it! Still have a quart that's a year old and it gets better with age.
I’m very excited for the February fermenting collaboration. I know nothing about fermenting! I love fresh cabbage but I’m not a fan of sauerkraut. However, my husband loves sauerkraut and because he is such a blessing in the garden, I’ve been trying to focus on canning things he will enjoy. If I could make sauerkraut it would be a fun surprise for him. I also hope to develop a taste for fermented foods as well considering the health benefits of eating it!

Have you tried mixing both red and green cabbage in your Sour Krauts. I like mixing when I make it . Yes, the red cabbage will turn everything red. But Oh! so good. I am in the process of using al the fermented onions and radishes etc in my fridge for making room. Ninette Bird - The Caribbean Wife

Whenever I make purple cabbage sauerkraut it always comes out very salty and bitter for some reason, even if I try letting it ferment for a long time, does this happen to you and do you know how to fix this?
I would say cut back on the salt a bit and that should fix both problems. Too much salt can inhibit the good bugs from growing fast enough. Try weighing it

I do love eating Sauerkraut but unfortunately I've been told by my GP to lessen my Salt intake bc of my heart issues.. is there a way for me to make my own without so much Salt ( issued warning by my heart specialist to only consume 1gram of salt per day... You can use half the salt by adding a starter culture when you make the ferment, about 2 tablespoons per quart but I’m not sure the conversion. Have you looked into keto/carnivore?
So just made a batch of sauerkraut and it is citrusy and very sweet (unusual not unpleasant) do you think this is ok ? only added some Carolina reapers maybe its this ?
If it’s not unpleasant I wouldn’t be concerned personally. It is odd that’s it’s sweet though. You could always try the baking soda trick. Add dash of baking soda to a small bowl and spoon a bit of the brine over it, if there’s a chemical reaction it is acidic

It depends on my mood. Sometimes I’ll toss it but usually I’ll cut it up very fine to get around the tough fibrous texture and include it
