One of the reasons why I opened my restaurant is, many come to Japan for its food and I wanted to introduce the dishes that use the locally sourced ingredients to whoever visit the area.
And now I would like to know what kind of Japanese dish you want to try next time you visit Japan apart from Sushi and Puppy Ramen as those are too ordinary 😋

Yeah totally, perhaps a cooking channel: A Broad A Pan. The concept is that Chris bakes different sorts of giant bread ("pan" in Spanish, and probably other languages), and proceeds to get inside of them to eat them from the inside out. These would all be 30-60 minute videos of a grown man silently eating man-sized loaves of bread.

Years ago, I heard of a restaurant owner was asking his friend's help on how to improve his failing restaurant before he loses all his money, the bank loans run out and he goes bankrupt. His friend had saved all the episodes of Ramsay's Kitchen Nightmares (UK and US) that had been aired on TH-cam (along with episodes of Bar Rescue) and he gave these 40-minute videos to his desperate restaurateur friend to watch. Chef Gordon Ramsay may be abrasive, strict and profane, but he knows how to cook and run successful restaurants. His restaurants have been awarded 16 Michelin stars in total and currently hold a total of seven. His signature restaurant, Restaurant Gordon Ramsay in Chelsea, London, has held three Michelin stars since 2001 (quite some feat!). Gordon's lessons for successful restaurants are pretty basic, though. Cleanliness in the restaurant, kitchen and food are a must. A good chef must be passionate about cooking, serving the best food consistently that he/she can. The chef and staff must have the drive and discipline to fight against lazy habits (which will kill a restaurant). A good restaurant owner/manager must be attentive throughout every service to make sure everything is running smooth and staff is not robbing the place blind. The chef and staff should be always interested in learning more of their craft to improve their knowledge, techniques and skills. Use fresh, locally-sourced ingredients and make sure they are organized and well labeled in the refrigerators and used or thrown away before becoming old and spoiled (don't kill your clientele with spoiled food!). Serve a small menu of good food so you do not have to keep and prep a wide variety of ingredients. Keep your prices as low as you can to attract customers. Having good signage on the restaurant is important along with advertising and going out to the public to distribute free samples to show how good your cooking is. And focus everything to the happiness of your customers.
Around 60 percent of new restaurants fail within the first year. And nearly 80 percent shutter before their fifth anniversary.
Often, the No. 1 reason is simply location - and the general lack of self-awareness that you have no business actually being in that location. www.cnbc.com/2016/01/20/heres-the-real-reason-why-most-restaurants-fail.html

The interesting thing about Ryotaro is, he makes subtle little mistakes that a native wouldn't make, but he is tottally understandable. He has great fluency, but with a little innacuracy, That is why he is a great communicator. These (tiny) little mistakes doesn't stop him from explaining easily. Kudos to you, Ryotaro. Also, i can hear influences from America, the UK and Australia in his pronunciation and accent. A great role model for SLA.

To be fair, I'd totally get Ryotoro's Risottoro if it were on the menu.
On a more serious note (although the first note was also partially serious), I love how the dishes in the restaurant show off the local history. It both feeds people's stomach as well as minds in a way. Makes sure the history and culture doesn't entirely disappear. 10/10 for concept.

Your restaurant is inspiring for me and the story from Daiki and the obvious passion for history and culture is one of the reasons I’m hoping to join you all in Japan with the JET program in 2022. I’ll know I’ve made it when I can come visit Akiu and maybe cross paths with the man, the myth, the meme: the legendary risottoro.
Hope you both stay safe and I can’t wait to experience this for myself.

The fact that I watched this video till the end is proof that I would watch anything with these two in it. you Made me watch an ad for a restaurant that I’ll never visit :( (not for any fault of yours)

Wow nice restaurant! Sendai is more off the beaten path, as I (and many tourists) are more often in Tokyo. I'm more fascinated by kaiseki. Usually the kaiseki course at onsen hotels often provide way too much food, a bit wasted when we cannot finish all the food. It would be interesting if there's a mini kaiseki option that would allow people to sample a variety of dishes and at the right (not too much) amount.

Well that settles it! 2022 I had been planning a 3-4 week japan trip and I was hoping to spend some time in Sendai. I will certainly make my way out to eat ryotaro’s dirt! Jokes aside I do look forward to visiting and awesome video Ryotaro! Hope to see more in the future!

trivial footnote: Why did that man at the end say "We wanted to reform this old building...." instead of "We wanted to renovate and remodel this old building..."
I would use the word reform mainly to talk about naughty, disobedient people or laws that I did not like.

This is so cool, Ryotaro! I bet this is the most insta-ready restaurant in the vicinity, but I also love the idea behind it and the food looks like it tastes great! Plus, way to get Chris to eat lots of veggies with his fried chicken 😉
