- Ingredients:
For the batter:
1 medium-sized cauliflower (cut into bite-sized florets)
1/2 cup all-purpose flour (maida)
1/4 cup cornstarch
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp red chili powder (optional for spice)
1/2 cup water (adjust for batter consistency)
For the sauce:
1 tbsp oil
1 small onion (finely chopped)
1-2 green chilies (slit or chopped)
1-inch ginger (finely chopped)
4-5 garlic cloves (finely chopped)
2 tbsp soy sauce
1 tbsp vinegar
1 tbsp tomato ketchup
1 tbsp chili sauce (adjust to your spice preference)
1/2 tsp sugar (optional)
Salt to taste
1/4 cup water
1 tbsp cornstarch (mixed with 2 tbsp water to form a slurry)
Spring onions for garnish
Instructions:
1. Prepare the cauliflower:
Wash and cut the cauliflower into bite-sized florets. Blanch them in water with a pinch of salt for about 2-3 minutes, then drain and set aside.
2. Make the batter:
In a bowl, mix all-purpose flour, cornstarch, baking powder, salt, black pepper, and chili powder.
Add water little by little to form a smooth, thick batter that coats the cauliflower evenly.
3. Fry the cauliflower:
Heat oil in a deep pan or wok over medium heat.
Dip the cauliflower florets into the batter and deep fry them until golden brown and crispy. Remove and set them aside on paper towels to drain excess oil.
4. Make the sauce:
In a separate pan, heat 1 tbsp of oil and sauté chopped onions, green chilies, ginger, and garlic until fragrant.
Add soy sauce, tomato ketchup, and chili sauce. Stir well and cook for a minute.
Add a little water to make a sauce-like consistency and then add the sugar (optional) and salt to taste.
Bring it to a simmer and then add the cornstarch slurry to thicken the sauce. Stir continuously to avoid lumps.
5. Combine:
Once the sauce thickens, add the fried cauliflower florets to the sauce and toss gently to coat them with the sauce.
6. Garnish and Serve:
Garnish with spring onions and serve hot!
