OATMEAL RAISIN COOKIES - Bonita's Kitchen

    Today we will be making OATMEAL RAISIN COOKIES, THIS ARE SO DELICIOUS AND SOFT. Recipe posted below!
    INGREDIENTS:
    2 Cups, oats 1 Cup, raisins
    1 Cup, brown sugar 2 Tsp, baking powder
    1/2 Cup, melted butter 1 Large, egg ( beaten )
    1/2 Tsp, vanilla
    METHOD:
    In a medium bowl add oats, brown sugar and baking powder and toss together.
    Then add melted butter to mixture and fold together.
    In a small bowl beat one egg, vanilla, then add beaten egg to mixture and mix well, then add raisins.
    You need a cookie sheet lined with parchment paper, drop batter by half tbsp full about 3 inches apart.
    Pre- heat oven to 350ºF, set timer for 8 to 10 minutes, when baked let cool for a few minutes, before removing it from the pan. .
    BAKING TIPS:
    Baking cookies for 8 minutes for soft cookies, 10 minutes for crispy cookies.
    Add more oats to thicken batter if a little wet.

Today is a hot day in Fresno (hopefully not next week) so I’m definitely going to try it when the weather cools off if I survive.     I made one adjustment (no two!) to this delicious recipe. First ..I browned the butter instead of just melting...second I used dried cherries..as no one at my house cares for raisins. Did the ten minute bake and they are cooling on the rack as we speak... Golly Molly they look good!! The browned butter gives it a deeper..buttery taste.

      Hi Sharon, Thank you so much for stopping by, these oatmeal cookies are so lovely. When making them if the mixture seems to wet at first add more oatmeal let sit for a few minutes before adding them to the cookie sheet. Also let come to room temp before removing them from the pan.     Hello Ms. Bonita, I just made these with slight modification. Instead of brown sugar, I used coconut sugar and in place of raisin I used cranberries. Turned out really delicious! Thank you

    Thanks for sharing this recipe!! Love that it has no flour. Made the cookies and baked for 10 minutes. The edges are burned and don’t have the thickness of a cookie. Not sure what I did wrong. They taste delicious though. I will try leaving it for 8 minutes and see what happens. Thanks 😊

      You are very welcome Oneida, if the batter is a little runny add more oats before scooping them on the cookies sheet. Also use parchment paper at the bottom and that will help the cook dough from burning as well. Leaving them at 8 minute they will be chewy and the 10 minutes are more hard. But diffently try again and let me know. Enjoy Bonita

    Could you make this recipe for a diabetic, maybe use stevia and a bit of molasses. They look so good.

    Oatmeal cookies are an excellent way to eat oatmeal (heart health) for people who don't like cooked oatmeal.

      I wonder if the oats are too large, I never made oatmeal cookies am thinking of grinding up the oats in a blender. Did you ever do it that way Philip? Or anyone ever try that? Thanks, my bag has a big red heart on it :)

      Hi Lorraine, Thank you for your message and for stopping by, this is a soft mixture. Sorry that happened but when you make the mixture if its soft just add more oatmeal. Plus when you place the scoops of oatmeal on the cookie tray have them apart not close together. This will give them room to expand, after they are baked let them cool totally before removing them from the tray. I hope this helps for your next batch of oatmeal raisin cookie. :) Bonita
