From Full Mount Position: If they start to choke you, with both of your arms, press down near the elbow of one of your opponent's arms (LI-10) to break the grip temporarily. From there drive your fingertips into the center of their neck right above the collarbone or into their eyes to blind them. To help get them off you, attempt to trap one of their legs with your leg and trap their arm on the same side, then roll to that side. Once they fall off you roll away from them, get to your feet and run away. Alternatively if they aren't choking you you can buck your hips forward, push their arms above their head and roll to one side to get them off you.
From Full Guard Position: If you are comfortable enough, then lock your legs around them so they can't move as easily. Strike the eyes and throat as before. To tire them out more to get out easier you can swim and lock your opponents arms allowing them to waste more energy trying to break free to hurt you. As they tire out you can go back to the throat and eyes as needed. If you are still struggling for a while you can also turn their head and dig into their jaw or chin and right below their ears to cause them a large amount of pain. When they are in a large amount of pain that's when you'll attempt to roll them over and escape. Alternatively, if you are flexible enough you can press your feet on the top of their knee or into their hip, and as you do that push into their eyes/throat and roll them over to escape.
Note: Do not go to your stomach. You can not defend yourself once your opponent is on top of you and you are lying on your stomach. Also note, this is a hard position to get out of when the weight difference is large, you will have to even the playing field by using dirty tricks like attacking the soft targets (eyes/ears/throat/groin) to help make it easier to escape.
