TASTY! Oven-baked Garlicky Eggplant Chicken Stir Fry Recipe | Aubergine | Brinjals | Aunty Mary Cooks. Oven-baked eggplants is quick and easy to cook without all the frying and grease. When stir fried with chicken and garlic it’s very delicious. Aunty Mary shows how to oven-bake eggplant for stir fry and how cook this easy recipe of oven-baked eggplant with chicken stir fry at home.
Ingredients
3 eggplants, about 1 kg
2 pcs chicken thighs, remove skin, cut into strips
1 garlic, peel and chop (use less if preferred)
Marinade for Chicken
1/2 Tbsp corn starch
1 Tbsp soya sauce
1 Tbsp Shaoxing wine
Seasoning Sauce
2 Tbsp sugar
2 Tbsp oyster sauce
2 Tbsp soya sauce
1 Tbsp dark soya sauce
1/4 C water
