    Sooji halwa is a simple yet delicious and yummy sweetened semoline fried in ghee and garnished with nuts. Its also popularly known as Kesari bath in the south region and Sheera in the northern region of India.
    Sooji Halwa

    Ingredients
    1/2 cup Butter/Ghee
    1/2 cup Mixed nuts and raisins
    to taste Saffron(optional)
    1 pinch Salt
    1 cup Sooji(also called Rava,Semolina or Farina)
    1 cup Sugar
    2 1/2 cup Water or milk
    Directions
    • Melt butter in a heavybottomed pan.Add nuts and then raisins and roast until very lightly colored and the raisins swell.Now add sooji and roast on low flame heat until lightly colored and fragrant.Add sugar and water/milk and increase heat to meduim-When most of the water is absorbed, add a pinch of salt and saffron if using.Stir in gently and cover with a lid-Cover and rest for a few minutes before serving

    I was one and only daughter of my family with two brothers and I was not allowed to cook by my loving Mom. Marriage changed my life and Kitchen was a world of alien to me. My Mom in law who can never be a good trainer failed to teach me instead hurting me with her words. Thanks to VahChef... you have made my life better. Any dish I cook is trained by you and you are my Guru. In olden days grandmother and mother would teach cooking but for me its VahChef who taught me cooking the right way and the best way. Everyone at home are shocked by my cooking and they agree am a better cook than my mom in law now..... Thank you Sir........

    8 am on this Saturday morning, I am sitting and watching this recipe. I have to prepare this now for my navratri Kenya puja. Now means in next few minutes. :)
    My mom takes 3 part water. She heats it up in a separate pan and then mixes sugar. She adds this combination to the roasted suji with almonds. I am going to try it now. Hope it comes out good. It's for prasad that too for kids.

    Hi Vahchef - I am a big fan of your website... I made the Sooji Halwa today and it came out very well.... My husband is not a big fan of sweets but he likes Rava kesari.... I have made this many times before but struggled to get it without the rava forming lumps... Your tip of adding the sugar to rava was very useful and I got a tasty, lumpless and pretty looking Rava Kesari today...

    Yes, I totally agree with you. Crushed Cardamom, cardamom powder or even whole cardamom gives a different aroma to the Halwa and many other Indian desserts. Also garnishing the Halwa with roasted and diced almonds gives it another dimension!
