Maangchi, I had a similar kimchi at a restaurant. It taste like pop soda but without radish they use nappa cabbage instead. They serve with ice. Is it also dongchimi? Can I use this recipe with cabbage instead?
Btw, one key of success in making this is temperature. If you live in a warm/hot area/season, ferment it for only 1 day outside the refrigerator. If you live in a cool/cold area/season, ferment it for 2-3 days.

If I was to add noodles to it to make it a meal, What kind of noodles should I add. I was thinking of adding the Starch noodles that you used for Jabche. would they be okay if they were cold?

Yes, you can also use napa cabbage for dongchimi. Some restaurants even add real soda pop to the brine to give it a taste similar to soda pop.

umm, I can't give you the right answer because I have never made dongchimi with daikon. But why not? You can try it out. Let me know if you make it
