    Maangchi, I had a similar kimchi at a restaurant. It taste like pop soda but without radish they use nappa cabbage instead. They serve with ice. Is it also dongchimi? Can I use this recipe with cabbage instead?

      Yes, you can also use napa cabbage for dongchimi. Some restaurants even add real soda pop to the brine to give it a taste similar to soda pop.

    Btw, one key of success in making this is temperature. If you live in a warm/hot area/season, ferment it for only 1 day outside the refrigerator. If you live in a cool/cold area/season, ferment it for 2-3 days.

    oh~ that's danmuji (yellow radish pickles). I always buy it at a Korean grocery store. I use it whenever I make kimbap. Check out the photo in my ingredient section on my website.

    Omg, omg, omg! I love your recipe! The taste of refreshing Dongchimi reminds me of my childhood when I visited my grandma. She served Dongchimi and my dad always called it "pure health" :)

    I am making this for the second time now-- I can't wait for that amazing flavor again! I used a 5 liter Fido clamp-lid jar, everything fit just fine. I also did not have cheese cloth for the garlic and ginger, so I cut a portion of a lemon bag (plastic net) and tied both ends. Yum!

    Hey Maangchi, This looks really good. Its been really hot lately, and the way you served the kimchi that it looked like soup, looks really good for the hot weather.
    If I was to add noodles to it to make it a meal, What kind of noodles should I add. I was thinking of adding the Starch noodles that you used for Jabche. would they be okay if they were cold?

    It's my favorite korean food. I heard many foreigners prefer it than original spicy kimchi
    i recommend Baek kimchi(white kimchi, search maangchi video) and this.

    umm, I can't give you the right answer because I have never made dongchimi with daikon. But why not? You can try it out. Let me know if you make it
