This is like the croque monsieur without the egg. This is so bad for you, but so darn good! Another sandwich Joel that is quite good is a chicken sandwich covered in brown gravy with boiled peas piled on top.....big thing in Quebec.

I had the most delicious Croque Madame for brunch last week. I searched for it and came across this video. I followed your recipe to a T and it turned out great! My sourdough slices were a little too thick and not square, so it fell apart a bit, but I will definitely make this in the future.

A Bechamel should always be made with cold milk. I also find a medium-poached egg or two on top more pleasing. Other than that, this sandwich looks incredible.
I've tested three methods for making Béchamel, and from my French culinary training, I've found that using warm milk results in the smoothest sauce with the fewest lumps.
Question: It's alright to eat the Croque Monsieur with your hands (it's not as messy), but is it bad to eat the Croque Madame with my hands? I usually find it easier than with a fork because I often disintegrate the sandwich with a fork....
