Easy, Cheesy Croque Monsieur Recipe | Jacques Pépin Cooking at Home | KQED

  • Next time you've got a need for cheese, try Jacques Pépin's recipe for croque monsieur. This French bistro version of a sandwich classic is even simpler than an American grilled cheese. Instead of standing at the stove and flipping, this sandwich slides into the oven after assembly, baking at 350 degrees for about 10 minutes. A homey lunchtime favorite.

    4 slices of bread, 4 slices of Swiss cheese, 4 slices of ham, 4 tsp butter

    This man feels like a family member to me. It is always the little things with him that fascinate me like cutting the ham in half so the bread edge has a straight edge of ham. Watching him alone is like Christmas Day. Watching him and Julia together was liking having two Christmas days in one.

      When he did that I just couldn't believe it. I couldn't help but start laughing with glee. For some reason it just makes me so happy. Then also like him just saying "things change" and snapping up a loose piece of ham in the same breath I was cracking up

      Couldn’t agree more. Started watching him on local PBS as a newlywed and continued through all of his series since (especially his show with Julia), some several times now. He’s an enduring treasure. Highly recommend his book “The Apprentice” too!

      Do this with your omelets. Semi circle omelet in an 8 inch pan, line up the right angle of the quarter circle with opposite bread corners. I do mine with cheese and jalapeño sauce.

    I was eating in my hotel in Bogota Colombia years ago and look up to see Jacques Pepin sitting at the table next to me. I had to say hello He was very nice

      Public broadcasting was the only place you could get cooking shows years ago. Jacque, Julia, Graham Ker, Jeff Smith, and others used to have shows.

    My favorite thing is how casually he brings up old school definitions of things, like how a croque madam was just chicken and there was no egg involved. No spite, no bitterness.

      I mean croque monsieur just means a "Mr Crispy" or "Mr Crunchy." It doesn't sound luxurious to a French person

    I didn't know about Chef Pepin until I saw something where Anthony Bourdain mentioned him. Now I watch/ listen to his videos to calm my brain. What a treasure I missed out on but it's been great getting to know him the last few years through these videos. 😊

    Jacques is a national treasure. If I had to choose one celebrity chef to teach children to cook, it would be him. He's not bombastic, flamboyant, or edgy. He doesn't intimidate or posture. Instead, he conveys simplicity without dumbing-down the need for technique and good ingredients. He also does this FAST, in real time! But, his true magic comes from the way he weaves in the tradition, sentiment, and cultural significance of these foods. My mother is 92 and when she watches Jacques its as if she is watching a member of her own family. I wish we had more of this spiritual generosity in the programs we watch.

      @@ViperT24 I agree in principle, but what you suggest couldn't be an absolute in history. Ingredients change over time due to a variety of reasons. Cuisine would never evolve and we would be eating the same stuff today that they had centuries ago.

    So simple, yet once again I learned something new (cutting the ham for a straight edge). Loved how easily Jacques noted how things change over time when talking about Croque Madame and todays egg on top vs. the chicken filling he was familiar with from back in the day.

    Addition by subtraction. It makes his Croque Monsieur better than others I've tried. Or any other cheese sandwich for that matter. As few ingredients as possible, and don't mess with it. And that holds true for for decades of his recipes I have made. His shows taught me how to cook. Started as a young man copying his recipes from a VCR. Now at old age, still coping his recipes from the internet. This still blows my mind.

The whole time I'm watching this I'm thinking "ok, grilled ham and cheese just with a fancy French word" then he throws a curve ball and bakes it and trims it and totally takes it to a whole new level!!     The croque monsieurs that I ate in France were toasted like this, but there was a layer of bechamel and extra cheese on the top. So good!

      I’ve gotten the bechamel version more often in Belgium than in France to be honest, but both are great in their own way. Crispy or creamy, just do what you like!

    Lol, I used to take care of an elderly lady whose husband was French, and lived in France for a while. She love this. It means a man rolled up in a blanket of bread!
