My mum use to prepare christmas lunch the day before as well so she could relax with family the next day. Tbh i miss turning up the day before christmas to her hustling around the kitchen making amazing food. Cherish your christmas's will your family people :)
Wow, Rhodes! My BMF & former roommate traveled for work & he was in Rhodes for 2 weeks. He said it was beautiful & the people were so cordial. He loved it there.
those beetroot leaves - they go great with dill in a soup. Thing is very simple - just sweat onion and garlic, add cut beetroot leaves, and diced potatos. Once they are blanched, pour over some veg stock and cook for ~15min. Add chopped dill and presto - it's pretty much done. Season to taste with salt and pepper, you might also want to add some cream - either to whiten soup, or just a spoonful in your bowl.
My Mom always started holiday dinners on the day before. When I started helping Mom with those dinners, I also started on the day before. The only things I cooked on the day of the dinners were the things that tasted disgusting, reheated. I started those things just before the dinner. Everything turned out fabulous. Thanks, Andy. You gave us a lot of great tips. Please keep them coming. Happy holiday to you & yours. I love your videos.
Another immense vid, Chef - thank you. What I personally take away from it the most is that if things do go a tiny bit astray, not to get stressed or panicky. I am really grateful that the runaway peas, escape artist sage and "The Worst Jug In The World" don;t end up on the cutting room floor
Perfect timing Andy! I’m gonna do my first Christmas lamb roast with 2 boneless leg pieces rolled in rosemary and garlic oil, duck fat roasted potatoes and prosciutto wrapped asparagus! All recipes of yours from over the years. Cheers mate happy Christmas!
If you boil the roast potatoes in alkali water that will break down their surface even harder so when you toss them they have an even more impressively fluffed up texture for even more crunch.
Andy! Yes Chef! Looks amazingly delicious 😋😋! Great tips about prep & re-heating hot food, takes a lot of stress out of trying to have everything ready at once! A great staff meal day 🙂 Peace and ❤ to you all
Looks great. A little different than our typical Christmas dinner here in Oklahoma. I might try this for our New Year's meal before I present it to the Christmas crowd so I don't get in trouble.
Отличный ужин! Прям пахнет Рождеством, очень захотелось приготовить, правда трудновато столько времени использовать духовой шкаф, хотя, это того стоит.🎉🎉🎉
In my home, resting meat is in danger of reducing naturally by herds of wild gazing family members. Have to employ an armed guard to protect the joint ....😂
Love your videos Andy keep it up :) I've used cornflour slurry to thicken sauces many time before but I always have this one issue...It's great and thick on a day of making but next day when I heat it up it's soooooo much thinner than the day before...Anyone any ideas why??
@tomholloway7566 ok cool thx for letting me know I didn't know that! So should I thicken it after I finish the gravy and again the day after? Wouldn't it change the flavour if I keep adding the slurry every day?
re the roasties.......pour half the hot fat into a glass jug.....put spuds into the tray and pour the rest of the hot fat over....no need to turn and no fear of a spud falling apart :-)
Wonderful!!! and 2 notes: #1 - the best pumpkin seed oil comes from the Austrian province of Styria (Steiermark) #2 - time to supplement those poncy little baking trays with regular-sized (bigger!!) ones!! 😅
One day I asked a little child who looked just like Andy to not dance in crowd that he could get hurt by dancing near man and child started fighting non stop with that man i mad sign to protect that child from and he was not agreeing to stop beating that man and now I see that boy's grown up form and Cooking seem to be completely different.
Can't tell you enough about how much I appreciaate mentioning Coeliacs! Can be really tricky this time of year with shared meals if people don't understand how easy it is for food to be contaminated, and that there are some really simple alternatives out there!
Exactly! Andy was not only cautious about not making his guests sick or having them go home hungry, but he also showed a simple alternative that most of us always keep in our kitchens. That's a game-changer!
Sorry Andy Gravy Roasting pan on the stove top, add flour and cook off wilst scraping off the fond from the bottom of the pan. start putting the vegge boiling water in bit by bit but do;nt over do it. That was my fiirst job as job in nanas kitchen
You can do it this way, it's gluten free this way, but he doesn't thicken it properly. I usually make gravy with "stock" (better then bullion with a packet of gelatin) then add the pan drippings after the meat is done. With bigger proteins that need more resting time, think turkey, make the gravy after resting.
Kiwi? Your profile says Australia, but then a lot of Kiwis cross the Pond, so... good to have you here! Aside, how long have you been in Australia? Because Is think your accent has Australianised. That is why you being Kiwi surprised me, your vowels don't sound Kiwi. I do,hold that our accents are quite similar, but they really differ on the vowels.
My appeal to every Muslim, my brother or sister, the owner of the channel, I know that it is not my right to comment on your channel, but God is my witness that our circumstances are harsh and forced me to do this. I'm from the UK but I've had lamb from various countries. In fact, I've had New Zealand lamb as my mum used to work for the NZMB UK office. However, despite eating lamb in almost every setting except at a Michelin-starred restaurant, I just can't get to grips with the flavour - I don't like it. I've never had lamb tartare but I've tried lamb burgers, sausages (the Moroccan style ones are passable), chops, shanks, etc. with different vegetables, seasoning, yada yada yada. When I eat lamb, I feel like my stomach doesn't even want to digest it, yet I've never had food poisoning or a bad toilet experience (TMI sorry) eating lamb so it's not that. I don't understand it. Has anyone else had this experience with lamb or another meat? I'm very open minded about food but when someone offers me lamb I say "Thank you but no thank you" every time.
My mum use to prepare christmas lunch the day before as well so she could relax with family the next day. Tbh i miss turning up the day before christmas to her hustling around the kitchen making amazing food. Cherish your christmas's will your family people :)
Honestly you are the best chef on youtube
greetings from the island of Rhodes in Greece...I'm a cook too and I really like the material you have on your channel congratulations

Yes, i agree with you 👌🏻😊
Andy thinks I'm in a serious relationship with my butcher
Andy is like wildly knowledgeable about this specific dish
those beetroot leaves - they go great with dill in a soup.

Another Christmas, another Andy Cooks… it’s getting to be tradition ❤😎👍🏻
You're a legend, Andy!! Love from MN USA
This year the chefs on yt are upping their game.
Thank you very much
Doing regular down. To earth kind of guy real sweet what's for lunch babe???❤❤❤
That one pea at 13:07 really wanted to prove Andy wrong about not losing any
Those who say peas don't have sense of humor are totally wrong.
Another immense vid, Chef - thank you. What I personally take away from it the most is that if things do go a tiny bit astray, not to get stressed or panicky. I am really grateful that the runaway peas, escape artist sage and "The Worst Jug In The World" don;t end up on the cutting room floor
Thank you Andy!!!!!! ❤
its amazing how a chef like Andy gets so giddy about a spud :))
As a Coeliac, wonderful to hear you think of us! Much love
You are a Star Andy ... such great technique, and great to follow.
Thanks Andy looks awesome thanks for posting
Man it's like every time I have a thought of a recipe, you come out with a video explaining everything perfectly!
❤😂5Very frugalgreat chef budget wise
We love ya andy
Big up to local butchers! Great video, Andy.
If you boil the roast potatoes in alkali water that will break down their surface even harder so when you toss them they have an even more impressively fluffed up texture for even more crunch.
Make this all the day before! And order takeout on Christmas Eve lol
That's a very handsome lamb dish You have there Andy 😋 👍 beautifully done!
Andy! Yes Chef! Looks amazingly delicious 😋😋! Great tips about prep & re-heating hot food, takes a lot of stress out of trying to have everything ready at once! A great staff meal day 🙂 Peace and ❤ to you all
Nice video, and nice to see what you make over there, will steal some ideas for here in the Netherlands!
Looks great. A little different than our typical Christmas dinner here in Oklahoma. I might try this for our New Year's meal before I present it to the Christmas crowd so I don't get in trouble.
I ran into the same problem with a thermos for the gravy. I had an "Oh duh" moment! I now use a canning funnel to pour my gravy into the thermos!
Отличный ужин! Прям пахнет Рождеством, очень захотелось приготовить, правда трудновато столько времени использовать духовой шкаф, хотя, это того стоит.🎉🎉🎉
This ones such a vibe... "FUULL POWER" haha
a half hour video?! thanks crew!
Merry Christmas! 🎄
I’ll sum it up in one word.
“Yummy “
Heat, fat, salt n acid👌
Thats a great video
Everything mentioned sounds delicious and I can’t wait to try it for myself so thanks Andy
You pea-ed on the counter!! ❤❤
In my home, resting meat is in danger of reducing naturally by herds of wild gazing family members. Have to employ an armed guard to protect the joint ....😂
VIdeo Idea might be to ask watchers for their christmas dishes and doing them with your own impression.
...90 degrees for the barrelcut that is, andrew.... ;D
My man! You should do a video for Braciole 👌🔥
How about the Feast of the Seven Fishes for us Italians.
It has to be turkey in the U.K. 😂❤we have lamb at Easter😊
Do you think blitzing the gravy contents then passing would work? Never done it myself.
Love you uncle 🎅🏻🫶🏻
Love your videos Andy keep it up :)
I've used cornflour slurry to thicken sauces many time before but I always have this one issue...It's great and thick on a day of making but next day when I heat it up it's soooooo much thinner than the day before...Anyone any ideas why??
The cornflour loses its thickening properties in the fridge, better to thicken the sauce when you reheat for serving
@tomholloway7566 ok cool thx for letting me know I didn't know that! So should I thicken it after I finish the gravy and again the day after? Wouldn't it change the flavour if I keep adding the slurry every day?
Only the Yorkshires missing :-)
wagYu andy... wagYu...
re the roasties.......pour half the hot fat into a glass jug.....put spuds into the tray and pour the rest of the hot fat over....no need to turn and no fear of a spud falling apart
:-)
It has to be turkey in the U.K. 😂❤
Andy got bullied by us Americans into making thicker gravy lol
but the jug is so entertaining
20:12 So if I have a big dog he can stay 🤔?
Well he is a big boy, I'd feel bad about patronizing him.
Wonderful!!! and 2 notes:

Isn't there an unpleasant gland in the leg of lamb that gets removed before you cook it?

Stellar beef tallow, grass fed non-gmo wagyu. Around $70 US for 10# on Amazon. 5⭐
U are a very cute man
Sorry but "You can't have lamb without mint sauce" is only something you say when you have to eat New Zealand lamb
i dont celebrate christmas. i have no one to celebrate with
First? 😭
That gravy is still way too thin.

You must meditate and call upon archangel like a prayer to help you so that all dark or odd times get vanished from your life forever
