    Curry is an anglicised form of the Tamil கறி kaṟi meaning 'sauce' or 'relish for rice' that uses the leaves of the curry tree (Murraya koenigii).

    We used peppers for spicy flavor. Pepper had more health benefits than chilli. Pepper was valued as precious as Gold by foreign traders, one of the prime reasons Europeans started to arrive in India. As a cheap alternative chillies were introduced. There was a saying in India that "Pepper can break poison".

    10:43 "Curry" is not a recent term.. Its originally a Tamil word for peppercorns and there are reference from 2000 year old scripts. Britishers jus derived it from Tamil like other such words.

      You may not be from Delhi but you are North Indian. Delhi food would be more familiar to you. We all are biased towards the food we grew up eating. That is why mother's food is best for everyone even if objectively that may not be true.

      ​@@swatisaini6447Not really. I think people try to distinguish between Pani Puri with potato filling and Pani Puri with Ragda filling. I grew up eating the potato filling and I hate the ragda filling. I always ask the vendors to make me the potato version and they usually comply. So, both options are available for Pani Puri.

    overall good video... but some comments were controversial- best street food.... and biriyanis are not made with basmati always. some regions use other rice in their authentic recipes

      Exactly, in Kerala for thalaseery biriyani khaina/jeera rice is used. Street food topic is definitely a hottake.

      Biryani is a Persian food that first came to North India. All this while, it was made with long-grain rice, particulary basmati.
      Sure, you CAN make biryani with other rice, but that's not authentic. That'd be like a white guy telling a malayali how to make beef parotta.

      @@scientia.veritas Also, we need to keep in mind that the biriyani version in North India was brought by the Mughals while in Malabar it was by Arab traders. So, differences in preparation and ingredient is only expected.

    No mention of Kolkata street food! Perhaps this guy isn't quite familiar with it. And, I'm sick of people equating Bengali cuisine only with sweets! Pulheez! Meat and fish preparations of Bengal, pastries (Luchi, Kochuri, Radha Ballabi, Khasta...) are to die for! Vegetarian masterpieces like Shukto, Chocchodi & Aloo Posto, and then, the vegetarian-fish combo dishes...

    Great video except for the Mumbai being the "Street food capital of India" over Delhi. You cannot beat Delhi in terms of food at all, be it street or be it premium. You'll even get amazing food from different cuisines (incl Maharashtrian) in Delhi but this is not the case at other places.

      I've lived extensively in both places, and it's not a black & white answer, it's nuanced.
      Both are major cosmopolitan towns, so you'll find some representation of stuff from all over India in both cities, but both cities have better representation of different specific regions. So for example in Delhi, besides North Indian, Punjabi, Mughlai cuisines, you'll find better representation of Kashmiri, North-Eastern, Nepali, Bengali (CR Park), etc. Whereas in Mumbai, besides Maharashtrian cuisine, you'll find better representation of Gujarati, Parsi, Goan, Sindhi, traditional basic South Indian (Matunga East), way better Desi Chinese, etc. Sadly, although there are some options, but not enough in my opinion when it comes to authentic Andhra, Chettinad, Kerala, & other traditional South Indian cuisines in either cities. I need to go to Hyderabad, Bangalore, Chennai to get my kick for those.
      In terms of International options, again both are Megacities so you can pretty much find anything, but as someone who's explored restaurants extensively in both cities, I find Mumbai has a slight edge, especially when it comes to more Western/European/Mediterranean/Middle Eastern cuisines, whereas Delhi does slightly better in Asian cuisines.
      For street food, it really depends on your taste, since culture is a bit different in both cities. I do love me some chhole bhature, momos, rajma chawal, etc. but for me personally, Mumbai's Vada Pav, sandwich carts, "fusion dosa" carts, pav bhaji, etc. gets a slight edge.
      But overall, for me personally Delhi wins as a food city by a narrow margin if I have to choose between the two. Mainly because North Indian/Punjabi is my favorite Indian cuisine overall & I might be a bit biased since that's my native food.

    I'm NOT from Delhi or Mumbai but, I've lived in those two cities for over 4+yrs and to be Honest Sorry Delhi, The Mumbai Food is Absolutely astonishing and Over the Top Quality. Delhi is all about Fried and Non-Veg things (Foreign Influenced) where Mumbai is More Desi Native Bhartiya.

    This was a great video. But a few things. That's a sad looking dosa. And no butter, it's either oil or ghee. Also, anybody else bothered by that ladle? I thought Sona Masoori was the most popular rice. Also, so impressed with Rick and Korbin that they already knew most of things that Irani shared.

      I'm from Chennai, eating a dosa as I watch this video, and tbh that dosa looked just fine, with the right amount of crispiness. But yes, he could've used oil or ghee instead of butter.

    I think the world needs to know more about the south indian cuisine, there is so much culinary science behind most of the dishes since god knows when. South Indian food was spicy even before the colonisation in the medieval period, but there were no red or green chillies, there was only balck pepper corn, and in South India has at least 50 major rice varieties that I know, basmati is good for cooking, but not great for health, it is okay to have once in a while, there are other varieties in the south that are predominantly better in protein content, lesser carbs, etc. There are also lots of south india only vegetables like drumstick

    "White people" really helped shape Indian cuisine. And these white people weren't just Europeans, Asian white people too. Like Scythians brought newer techniques of wine production, Greeks brought saffron, Yuezhi brought citrus fruits, Turko-Persians brought tandoor oven, samosas, Mughals brought biryanis and pulaus. India is the most invaded country in the world(invaded 200 times), so there is going to be a long history

    I don't agree with the Chilly pepper bit! Hot taste in Indian cuisine ( before the Portuguese influence) was, of course, using Black / White/Green peppercorn, fr down South in Kerala...and there was ' Chui Jhal' in Bengal and other Easter parts of India and other South East Asian countries - "Piper chaba, commonly known as piper chilli, is a flowering vine in the family Piperaceae native to South and Southeast Asia.P. chaba is called chui jhal or choi jhal in the Khulna Division of Bangladesh, and the states of Tripura and West Bengal in India. P. chaba is found throughout India, and other warmer regions of Asia including Malaysia, Indonesia, Singapore and Sri Lanka."

      It's all about adding fresh mint right at the end, a few seconds of boiling tea and stopping it. The mint leaves have to be fresh tender tips and it adds a lot of flavour. Dried or black colored mint leaves and stems alter the taste and will turn a little bad. Fresh mint leaves and apt amount of boiling time infuses a great taste to the tea. Too much mint leaves and too much boiling time adds a bad flavour to the tea..

    He really needs to get his homework done on some things but the worst part was him talking about eating with hands.
    India was the 2nd richest country before the British arrived... So saying that we used to eat with our hands because we couldn't afford utensils is a disgrace to our history. Also, in the whole SouthEast Asian & African cultures, spoon & fork were forced by European, in particular British, French & Portuguese colonisers as part of their "civilization mission", the "white man's burden".
    We have been eating with our hands since time immemorial as ayurveda & yoga has always insisted on it for it's various benifits which you can easily search for on the internet.

    But Delhi doesn't have one place for street food rather multiple places, infact mnay places r having only 1-2 eating places. So delhi having more scattered places and very few clusters like Jama Masjid area, Chandni Chowk, CP.
