Mini Caramel Almond Chocolate Mousse Cake / Coffee syrup / Recipe / Boone Bake

Hello.
I'm Boone Bake.
Today I made a cake with caramel mousse, caramelized almonds, and rich chocolate mousse.
Do you like caramel?
I like caramel.
So I love caramel mousse among mousse.
I think the caramel and chocolate mousse is a fantastic combination that doesn't need to be said.
The almonds were caramelized and put in it and it tasted so good.

You can also make 6 mini-size like me.
You can even make a 15 cm * 5 cm cake with this recipe.
(I used a regular muffin mold for the mini-size mold.)
The syrup was made into coffee syrup.
It was a really good choice.
I put kahlua, but if you don't, you can add rum.
A fantastic combination of a really soft chocolate mousse and caramel mousse~~
It became a delicious mousse cake that reminds me of a cup of coffee.

● Caramel Chocolate Mousse Cake
(mold size: 7cm*6cm*4.5cm (H) / 6 pieces)
(Or 15cm*5cm, 1 pc.)
♥ Caramel Mousse
23 g sugar
8g starch syrup (or glucose)
8 g water
A pinch of salt
11 g water
2 g gelatin
(2g powdered gelatin + 10g water)
10 g sweetened condensed milk
87 g heavy cream
5 g sugar
♥ Chocolate Mousse
1 yolk
15 g sugar
3ml vanilla extract
50 g milk
48 g heavy cream
30 g milk chocolate
95 g dark chocolate
3g gelatin
(3g powdered gelatin + 15g water)
220 g heavy cream
20 g sugar
● Caramel almond stick
About 30g

♥ Chocolate sponge cake
(Mold size: 18cm*18cm)
20 g milk chocolate
25 g milk
15 g vegetable oil
(Please use non-fragrant vegetable oils such as canola oil, soybean oil, corn oil, grapeseed oil.
Not use olive oil)
2 yolks
15 g sugar
30 g cake flour
15 g cocoa powder
1/4 tsp baking powder
2 egg whites
20 g sugar
● Dark Chocolate Mirror Glaze
57 g water
60 g sugar
90 g starch syrup
50 g sweetened condensed milk
7 g gelatin
(7g powdered gelatin + 35g water)
95 g dark chocolate
● Coffee syrup
20 g water
15 g sugar
1/4 tsp instant coffee
kahlua 3ml (or rum)
How to make ㅡㅡㅡ ㅡㅡ
Water and sugar
Melt the sugar in the microwave and...
Mix in kahlua and cool to room temperature.

И желатин, и агар коагулируют, но ...
Его использование и температура разные ..
Агар следует заливать при температуре выше 45 градусов.
Если вы используете его неправильно, чтобы сочетать такие вещи ...
Другие готовые кремы можно растворить, поэтому необходимо провести тестирование.🥰💖🎄
