      Could I use raw onions with the peppercorns?

    I found green beans at the store for .98¢/lb
    I thought it was a pretty good deal so I got 4 pounds to pressure can!

    Just canned some pint jars and about half of the 18 jars the water level has dropped down leaving 1 or 1 and a half inches of beans uncovered. I did have a minor amount of siphoning take place because the water had a little discoloration to it. Are those jars going to be safe for storage? Or should we consume them over the next few days? All the jars have a good seal, I can't pull the lids off.

      It should be fine but use those jars up first. 👍🏻 Not immediately they should be just fine!

    Thank you so much love your videos. First time canning green beans and I had the 1 inch headspace but after pressure canning it went below the bean level. Is that ok? Do you know why it happened?

      could be several factors. too much pressure. taken out of the canner too soon. it's a constant game canners have while canning to control their canner and get the perfect headspace.

    I'm so happy many of you experienced canners are doing a lot of entry level videos. I see so many new folks in the chats looking for info and support.
    Green beans in pints was the very first thing I pressure canned. I sent pictures to everyone, I was so proud.

      Dagney Taggart I have canned for a few years now, mostly meats and beans. I have never done green beans or tomatoes. I think I’ve gone about this backwards, but getting it done! I’m so grateful for videos like this

    I would love to see a series like the last two videos you’ve made. I grew up in foster care, and didn’t have a “mom” to teach me anything like this, now I’ve been learning through TH-cam and love this. I have also been helping a few ladies in the neighborhood can. We have canning parties lol. This would be so helpful to all newbies. Thank you as always

    The only thing that blanching accomplishes is it keeps them from floating in your jars. If these are going to the county fair, then blanch them. Otherwise, raw packing is fine.

    Heather im 60 years old.i love your channel bc you teach new canners how to do canning.You would be surprised that the young people don't even know how to snap a green bean or shell pea's.but its great that we have someone like you to teach them.god bless you and your family.

    Miss Heather thank you for the heads up about Country View Bulk Store. Went there today for wide mouth lids...only half sleeves left but picked up what I needed. Enjoyed the 2.5 hours one way as there were cds I wanted to listen to...win win in my book. Your patience in teaching us all things canning is such a blessing. Thanks ❤ Today is Aug 6th. Wide mouth lids were 30 cents each and reg was 26 cents each...do not know when you purchase..think the.receipt said the 3rd..tried to read it...you paid 22 cents for wide mouth and 18 cents for reg mouth. Up 8 cents a lid...ouch. But I have them.

      You can do it! Green beans are a great first effort, or try carrots. No are easy to handle. You can raw pack the first time and consider hot pack once you're comfortable. Both are low cost vegies to start.
      I'd suggest using your first batch soon, to reinforce the knowledge that you are making something good. Once you have that confidence, you can start stocking your pantry.

      I'm so with you on this Debra! I just got my first pressure canner last month. Mine is a Presto 23 quart, it was all I could find and the price was just right for me!! I'm so excited and nervous to get going!

      @@rachalnocchi5600 I ordered and All American in July, but I have not had it as yet, but in the interim I saw a larger one available, so I bought that as well. I hope that the larger one will get to me (customs permitting, they seem to stop everything) so at least I can use it for my current produce, the 910 I ordered originally, is more suitable for me in all honesty, but needs must. I know that the lady on 'Homestead Heart' has uploaded a number of videos thus far using her Presto canner. She recently received an All American, so it could change from now on. She has canned a variety of produce and has quite an extensive playlist - if that helps. All the best and happy canning!

My rooster loves wild bird seed. LOL no one else but him! hahaha the only thing they all love is watermelon and meal worms. no one snubs those! LOL my chickens are prissy too!

    Oregano essential oil is very effective to Carpal tunnel and it also helps arthritis too my husband’s hand is really bad with carpal tunnel and he uses oregano oil every day and it actually works well, he got the cortisone shot once and it only lasted three days then his hand started shaking really bad but now they don’t anymore because of the oregano essential oil just thought I’d share that with you or whoever has carpal tunnel 😁 I use Lipton onion soup mix for my green beans and my carrots and it’s so good! Canning is so much fun I really enjoy canning. Once you get passed the intimidation of pressure canning you will be just fine it’s just that first time doing it!

    I should have paid more attention back in the day when my Grandma was canning green beans cause they were the best tasting green beans ever. Have to say, the smell when she was canning green beans was super gross, though. Thanks so much for sharing!

    How much water was in the canner when you added your jars of beans? Also is it ok to leave the ring on the completed jars? I’m afraid I’d do something to mess up the sealed flat with no ring to secure it?

      In the All American Canner, it's 3 inches of water BEFORE placing the jars in. A Presto canner is different, and I don't own a Presto and can't remember what their water level is before canning, so that will depend on which canner you're using.
      I never keep my rings on. If your lid does come unsealed, and you have a band on it, it could falsely reseal, where as without a band, if a lid unseals, it will pop and you will begin to smell it after awhile in your pantry. Also, when processing food, the air evacuates out of the lid during processing. So your lid moves up and down and sometimes food particles will leak out of your jar. Without removing the bands and cleaning your jars after processing, those food particles can mold, causing your lid to pop. Also causing your rings to rust from trapped water. Now, if you are moving, bands can protect your jars as they are being transported, but if the jars are just simply sitting in my pantry, they are never on my jars.     Wonderful green beans and i wish I had access to a good farm stand that sells really fresh produce but i find here in N.W. Florida that right now its not cheap just better tasting to can your own and know what is in there.     Thank you for taking the time to share your process. The one good thing that I had growing up was that we had a garden and small animals like chickens, pigs, goats, and rabbits. Also that my parents canned food so I was able to learn from them. My father was a fantastic cook he learned a lot of his skills being in the military, so I was able to watch him and learned to cook from scratch. Not everyone was raised this way so this make me great full that I learned these skills and that my parents gave me the opportunity to have the knowledge of preparation. Thank you again for the knowledge you are sharing to us all!

    A fellow Heather! I just found your canning vids last night and been binge watching. My mom canned my whole life, but she never actually taught us kids to do it. I kind of got the jist of it as I watched, but never actually 'participated' in the canning process. Her canner looks exactly like yours, though she got her's decades ago. As I was watching your other vids, I was listening to you and thinking, "She's a MIchigander!" as many of you have a certain accent (very similar to Canadians). Now, in this vid, you confirmed my suspicions!! No worries, I love Michiganders...I'm married to one!! I'm an Ohioan (yes, one of those evil neighbors to the south...lol!!) Loving your canning vids and thank you for the wealth of canning info, as I'm preparing to delve into it as soon as I can get a pressure canner myself (they're expensive, especially right now!).

      Same here, I canned green beans for the first time in the wee hours of yesterday morning! lol I harvested about six pounds out of the garden the day before and was able to fill six quarts... Very rewarding.

      When I am loading it, it's on very low....then once I get the lid on and we get rollin, I turn it to high!

      it would vary depending where in Cali you live because of your mountain areas. Type into good where you live and elevation and it will pop up for you!

    Oh, Heather! Guess who is getting back into the swing of things?! I'm buying 2 bushels, hopefully 4, this week! Most will be here at the house, a few to Dad and Max, and i'll be making some to sell (Daddy needs to make some money!) I'll be washing mine, outside, using (4) 18gal rope handled totes from walmart. I'll be putting holes in (2) of them, turning them into colanders so it makes it easy to wash/ rinse and strain them out! Pretty shary, huh? I'll be using this method for ALL my BIG future projects of veggies and possible fruits. =) anyway, it's really nice to go back and watch your videos to have a refresher as well as the books. Hope to hear from you! =)

    I got green beans today!!! I have my Presto manual, USDA and Ball books out to finish studying. I'm listening. I don't know how many pounds or even know if it's a bushel of beans. Box said 30 lbs, store rang up 8.62 lbs. Weighed myself then w/box 11.5. Weighed box 22.5 lbs. How many jars do I need? Thank you in advance Kneady.

    Can you share how you know the how long to pressure can each item/per size container? I’m also in MI and just started canning. I’m worried I didn’t properly can my tomatoes:/ I did quart jars for 10 min once it got steaming with a 5 pound weight

    The first thing I ever canned was green beans. I've only canned two things Lol. I haven't eaten any of it but I will make a chicken pot pie for the first time this week and use a jar of green beans. I shouldn't worry because what could be the worse that can happen?     I wash my beans before cutting them up. I would think they would get soggy by washing them after cutting them up.

    I am a guy canning been canning for a while and came across this one tired it with your recipe it was good. I also added my cajun seasoning to it and when it was time to eat wow made it better so thanks. Dont hurt to add new things. Your site was helpful thank your keep up the great work

    Do you use your tattler lids anymore? I don't see them in the videos. I'm considering getting some since I can't find regular button lids. thoughts?

    How do you know when they are done growing? Mine are velvety but look to be full size. I don’t know if I should wash them and hope the fur feeling comes off or if they need to grow more?

    What was the solution you put in the jars? Just boiling water? Or a mixture of vinegar?

    I have two bushels of green beans to can tomorrow and I’m just not feeling up to it. My former partner/Sergeant was killed today, I’m heartbroken and not in the mood to deal with canning. ☹️😢

    I'm trying to convince myself that pressure canning wouldn't be scary, even though just the thought of it scares the bejeezus out of me. lol Is there any chance you will do a video on candy apple jelly?

      do not fear pressure canning, it's safer than water bath canning and easier! hahaha I don't have plans on that jelly this year, I am making caramel apple pie jam for the kids but honestly, just make apple jelly from juice and add red hot cinnamon candies to it!!!!! thats it! it's so simple. :D

      I have! I did a mix last year of green and yellow. they were so pretty in the jars! I think I just added peppercorns and canning salt to those.

    I never had fresh green beans as a kid either, which is probably why I only like canned green beans. I will admit the ones I can are better than store bought though :)
    Even though I am not a beginner canner I love to watch all the canning videos, it helps get me motivated to get off my butt and can something, especially when its summer and I'm hot and don't want to lol. Its easy to be motivated to can in January when its cold and the air is dry and a little steaming up of the kitchen is a nice thing.
