Fastest, Easiest Chicken Mole Ever!

  • 2 tablespoons butter
    2 tablespoons all purpose flour
    2 tablespoons chili powder (If you don't want spicy, use California chili powder.) I like New Mexico chili powder, which is slightly spicy.
    2 cups chicken broth
    spices:
    1 tsp of salt
    1/2 a teaspoon black pepper
    1/2 teaspoon garlic powder
    1/2 teaspoon Oregano
    1/2 teaspoon cumin
    1/2 teaspoon onion powder
    1/2 tsp crush chili flakes (optional adds more spicy)
    1 large shredded chicken breast.

    My Grandma used to make Chile Colorado Mole (No Chocolate or any sweet substitute that’s for mole poblano) all the time even great for tamales 🫔 now I never heard there was a short-cut! Wow definitely going to have to try it out thanks for the tip 🥰

    funny for years i have always done this...except when i got all the stuff in the pan to simmer slightly id add some bricks of mexican chocolate or a few scoops of peanut butter...nice vid!!

      Hi Friend, I do realize that a lot of people consider "mole" to be sweet. It is not my preference. I watch a lot of videos, and a lot of people will call this mole. I think this technique is very similar to simple red sauce. Call it whatever, it is still yummy! Thanks for watching.

      Hi Friend, you can search for dozens of "mole" recipes and indeed there will be dozens like this, as well as the chocolate kind. I personally don't care for the chocolate kind. This "type" is very much like Chili Colorado. I never understood why so many people call it mole. I just gave and chili powder option. Either way, it comes out great. Thanks for watching.

      Hi Friend, it is funny how so many recipes call this a mole. It is done up very similar to Chili Colorado. I realize that a lot of people make "mole" with chocolate or peanut butter, but I have never cared for that kind of mole. I have always liked it more this way. It is just different tastes.     Thank you. This is the way I make my Chicken Mole. I don't have the pallet for peanut butter or other sweetners. I normally use chile molido powder but this year, I made my own blend of chile from dried chiles, can't forget the chile de arbol.

    My grandma makes a red mole with chicken. That's spicy and not sweet (yuck). Looks like this. We always called it red mole

      Hi CL, people make "Mole" in different ways. Yes, there are pods with onion and garlic, which takes more time. This is a shortcut recipe, but it tastes just as great. Spicy can be the New Mexico chili powders, depending. California chili powder tends to be tasty and really has no heat. It is the one my mom used because none of us liked spicy at the time. I have since learned to love spicy.

      Hi Friend, I personally don't like the chocolate Mole. You can look up different recipes, and you will find more than one way to make it. I do have various chili pod Mole recipes. I don't make it with chocolate, because I don't like the chocolate Mole. This is a super easy way to make a tasty dinner. TFW!

    Thank you for the recipe. I have been looking for a recipe that is easy and doesn't include a lot of stuff, actually this is sort of like my enchilada sauce. My mom used to make mole all the time, but, of course now she cannot remember how she did it. I don't like it bitter and dark which is the way many restaurants make it.

      Hi friend, a lot of people make mole and enchilada sauce very similar. Some people make mole with chocolate. That is not my thing. I like it spicy or just mild and tasty.     Delicioso! I had some leftover rotisserie chicken and wanted a simple and quick mole recipe and found yours Rosie. This is soooo tasty. Next time I'll try making it with dried anchos (use them for making home made chili) in place of chili powder.

      Hi Edward, There are several ways to make mole. This is the cheater quick way. I personally don't like the kind that has chocolate. A lot of people do. I made a chicken mole video, that includes real onion, garlic and new mexico chilli peppers. I will post that soon. That video doesn't include chocolate. This does indeed go well with spanish rice, refried beans and tortillas. Yummo! Hope your team wins tomorrow!

      @@RosieCooks Hi again, My teams are not playing. Miami -AFC and Packers -NFC. I tried something new last night with sugar cookie dough and Rocher candy. Take 1 1/2oz dough and wrap it around the candy, place in a well sprayed cupcake pan, no paper cup, and bake 15-20min . The cookie dough fills the pan and it looks like a muffin, the candy stayed in the middle and stayed whole. They look like muffins made of cookie . Try it,You'll like it.! 🌷🌷🌷

      Hi, friend making this sauce via the chili powder method is super easy and comes out very tasty. Just remember, California chili powder has no spiciness. New Mexico is a little bit more spicy. And most of the basic chili powders won't be spicy. That will be up to your preference. I hope you have a good luck!

      This type of mole is not intended to be sweet. Traditional mole is sweeter. They usually add chocolate. I personally don't care for the sweeter type of mole, but that's just me. It's just a matter of taste.

      Hi Friend, I love this stuff. Remember this when you have leftover turkey the day after Thanksgiving. Yeah, I love spicy. You probably could have added a tablespoon or so of water to lessen the spicy. I used those chili flakes, which add a kick. Also, some chili powders are not as spicy. California chili powder is not spicy. I used New Mexico which does pack a little punch.

      I love Chipotle chili. That is what they use to make tinga de pollo. It has a really good flavor, but it is spicy.

    Im wondering how this recipe tastes, because that is not mole. . You’re missing the chocolate. I know some people put peanut butter instead of the chocolate, but I personally prefer the chocolate. That’s why it’s called mole.

      Hi Analyz, Yes, some mole is made with chocolate and peanut butter. It is not my thing. There are many recipes that are similar to this recipe. And yes they are also called mole. To answer your inquiry, It taste excellent, if I do say so myself. lol This is a shortcut version. I do have a more extensive recipe coming out soon, which includes real onion, garlic and chili pods.       Hi friend, This is such an easy way to make a quick meal with some leftover chicken. Just remember that California chili powder is not spicy. If you use New Mexico chili powder, it will be spicy.

      Hi Friend, I know that a lot of people make mole using chocolate. I personally do not care for it with chocolate. You can look up 100 recipes here on You Tube, some will be made with chocolate, and some will be made like this. It is just your preference. Thanks for watching.
