    ▷Ingredients:
    ■Mascarpone cream
    1 egg yolk
    18 g sugar
    50ml milk
    1 tsp vanilla extract
    100 g mascarpone cheese
    ■Soufflé pancakes (for 5 pancakes)
    2 egg yolks
    1 tbsp water
    35 g cake flour
    3 egg whites
    40 g sugar
    ▷How to make
    1. make the cream. Add the sugar, milk and vanilla extract to 1 egg yolk, in that order. Heat in a hot water bath to 80°C to make the anglaise sauce.
    2. Strain the anglaise sauce, add mascarpone cheese and mix.
    3. Make pancakes. Add water and cake flour to 2 egg yolks, in that order.
    Add half of the sugar to the egg whites and beat. Once the sugar is incorporated, add the remaining sugar to make a meringue.
    5. Add a scoop of meringue to ③ and mix, then combine with the remaining meringue and egg yolks. Put the mixture into a squeeze bag.
    6. Heat a frying pan, add a thin layer of oil, and squeeze out the batter. Add a little water and steam the pancakes for about 8 minutes.
    7. Flip the pancake over, add a little water and steam for 6 minutes.
    8. Sprinkle cream and cocoa powder on the pancake and serve.
