Funny 1950’s jelly roll story: My mum’s next door neighbour and close friend loved Mum’s jelly rolls (Mum often used a lemon filling, I think it was Sheriff brand) and wanted to make one. A day after giving her friend her recipe, Mum received a phone call from next door. Her friend was shrieking…”It’s running everywhere into the oven! I followed your directions!!! Help!” Mum ran next door and instantly saw the problem. Her friend used a cookie sheet like the recipe said but hers was OPEN on 3 sides!!!! Mum always used a cookie sheet with short sides. Her silly friend didn’t think of the very runny batter running over the edges. She said it was an awful mess.
To fold, start in the middle, scrape the bottom of the bowl up the sides back to the center, a circular motion, toward your body. At the same time rotate the bowl in a circle., do not stir, stirring deflates the volume you just beat into the egg whites.
I have made jelly rolls/Swiss rolls with my grand daughters. If you flip the pan onto the powdered sugar coated tea towel, then lift off the pan, peel off parchment paper and add another dusting of powdered sugar before you roll, making sure you actually incorporate the tea towel into the roll then you won’t get cracks on the outside of your cake. 😁

I love watching your cookery videos. It's interesting to see a vintage recipe come to life. The cake you made looks like a cake that we have here in England called a "Swiss Roll". They were usually served at birthday parties when I was a child. You can still buy them in the supermarket. I think they can be plain with jam in the middle, or jam and buttercream, or a chocolate flavoured sponge, with the buttercream filling. 😁
I've made one before, usually a pumpkin one with cream cheese filling. Another would be with Almond paste canned filling. OOOOOOHH YEA! So many ways to personalize. Love your cooking vid's. Love your channel

I am laughing. Despite all the cracks, it's cute and I imagine it was tasty. My Aunt Carole taught me how to make jelly rolls and pumpkin rolls 20 years ago. Her's were perfect & never cracked because she baked at a lower temp and pulled them out sooner. She is in heaven now, but her daughter, granddaughters and nieces are all still making her signature jelly rolls and remembering her fondly. 🙂
Yum! If you want tips for next time, beat the egg whites a bit longer, fold in the thicker mixture in a little at a time, use a rimmed cookie sheet to bake it, it should be thinner, and bake the cake for a little less time. And you roll your cake how ever you want!! Lol

I make pumpkin rolls. I took over after my mom couldn't do it anymore. It does take practice. They always want to crack. I use a high side cookie sheet and it makes the edges softer. But yours looked great. I put cream cheese with powder sugar as a filling.😺

I think you can roll them also - how you did it first- they’re definitely delicious with a white cream filling also 🌟 Laci - order a oven thermometer for your oven - they just hang in there- then you’ll know exactly what it’s baking at and you can adjust your temp - they’re so easy - and everything comes out just perfect 🌟

I do think using a pan designed for a jelly roll and not lasagna would help with the actual baking process.

Here's a tip for baking with egg whites: take one third of the already beatten whites and add them to the densest mix to lighten it up. Then pour the dense mix into the remaining whites and gently fold it in. It doesn't matter what the recipe says, that's the correct technique. Happy 4th of July!!!
LOVE it.... just last nite I responded to another youtuber about blackberries and that we picked TONS of them every year, Grandma used to make an angel food cake in a sheet pan, schmear it with blackberry jam and rollup, you can glaze it or just a spritz of powdered sugar.... thats the flavor of fall to me..
These recipes are actually quite old. A lot of homes didn’t have mixers or even electric stoves when these were originally made. They would have used wood stoves in the old days. In one place I rented in the early 90s, I had a small oil stove that was for cooking and heating the house. Note: Jelly roll pan is actually one of the deeper/longer cookie sheets. I watched a video on TH-cam and they showed to bake it a minute or so less than recipes state. 😉. You did it the same way I would have to begin with. These look great! 😊😊. I just bought of another filling, vanilla pudding with pieces of fruits spread out on cake

Hi Llama Llama from Australia! I moved - and thanks to my mother's inheritance from my grandparents' house - and bought a small 3 bedroom unit that is 3 years older than me (eep!) back in March 2021. I am going to try and remodel it to suit the mid-century Mod aesthetic and the modern Smeg 50s style range of appliances and some replica Modernist furniture!

Yeah, that's why you separate the eggs so you get the air in the egg whites, and don't deflate them when folding in the rest.
