I just had their pizza for the first time today. It was pretty damn good. Love the fact that they ship to CA. No more dominos crap for this family. We ordered 12 pizzas on a friend's recommendation.
I still can't figure out how to make this damned crust! I've tried everything. At this point I'm considering analyzing Chicago city water to see if that's the key.
Jeff Smith (The Frugal Gourmet) figured it out. It's in a book he wrote called "The Frugal Gourmet Cooks American", in the section titled "Chicago". I made it and it's pretty darn close and was good. You'll need a heavy, seasoned pan. Good luck.
If you don’t have a specific deep dish cake pans use a cast iron, it’s arguably better for a home oven. Also there’s no cornmeal in the dough,use corn oil, vegetable oil, or olive oil, and butter up the cast iron. Dough recipe is AP flour, salt, yeast, tiny bit of sugar, and oil. At under 60% hydration. Lou Malnati’s proofs their dough in the fridge overnight. Then let’s it proof in the pan/cast iron and come to room temperature before baking.
When the guy told the host that he couldn't have a jacket and he asked why, I was really hoping he would say, "Because you're from New York." Chicago pizza >>> limp New York pizza

Unos deep dish is highway robbery. Shit looks nothing like deepdish pizza and is small as fuck. I get pan pizza from dominos for cheaper , bigger, and tastes just as good.
