@@oneblacksun no. because realistically 10/10 would mean its better than anything in existance as you cant go higher than that. 5 if the middle of the scale, so it roughly means average, and average is good, nothing remarkable, but still basic good that youll still eat. thats very logical. if 7 is bad, wtf is 1.

Hey Josh, love your videos. Last year I took my family on scotts pizza tour and our favorite was Linustri as well. Scott is amazing and knows everything about pizza and gave me a tour of many pizza shops around New York City and I also got to sit down and talk with the owner of Luigi's. He is the nicest man ever and I love his family's story, I am so glad you got to meet them both. When Scott took us to Lindustri he ordered us a Burrata pizza and it was the best thing ever. He showed me the inside and knew everyone very well. What amazed me about Lindustri was the air tight room that they use to keep the dough the right temperature while making it. In the end he took us to a Nutella pizza place which i told myself i was too full but ended up eating 3 slices and Scott let me take over for a bit to make the pizzas. Overall a 10/10 experience would try again, and I am glad you got to experience as well. Keep up the amazing work.

@@yuhyuh8171 I mean like you're not wrong. But I feel like he judges a lot of these without the context of the level of venue, intention. and what/who they intend to target.
Like there are certain cars that are objectively worse if you measure the car on a horsepower per dollar scale. That's not a terribly relevant scale for most people though.
Also usually the "best" pizza shop in any given city doesn't necessarily represent the breadth and width of what's actually available for that style of pizza even if it's the most talked about. Sure it's one way to do it. There's a lot more generally though, and limiting it to that is necessary to scope the video appropriately, but doesn't make for a good real comparison with any meaning. Top 5 at least would probably be needed to get some variation and see kind of what's available in that style.
I get the need to limit it for time, it just feels... clickbaity? I think that's the best way to put it. Kind of veering into tik tok attention video territory.

Feel like New Haven was done dirty in this video - no surprise that big cities won with how you selected restaurants based on # of people recommending them. With that methodology, it's actually impressive New Haven was even mentioned given how small it and CT even is. Either way I don't agree with your list, Lucali's is one of the best pizza's i've had and Luigi's is pretty mid compared to NH and other NY pies. Also Lou Malnati's is a huge chain around Chicago, they have something like 50+ restaurants so that score is highly dependent on which one you go to

Gotta come across the border from Detroit to Windsor. We have a massive Italian population and what makes Windsor pizza so unique is we use shredded pepperoni which allows for better coverage and out cheese is made locally by a company called Galati and most places will have cornmeal on the bottom for a nice texture and crunch. Also something about Windsor pizza is the heavy use of canned mushrooms (which has a historical context with the lack of availability of fresh back in the day) but people found out canned mushrooms hold up better against high heat needed to cook pizza versus the fresh counter part.

The cheese and topping are above the sauce, where they belong, and they’re cooked in a deep dish pan that’s been seasoned for decades with the best caramelized cheese crust out there. Don't do culinary school. Don't know where you're at in life or how old you are, but culinary wages don't offset the cost. You're starting off with debt you don't need. You'll learn a lot just entering the work force if you're intentional about the restaurants you're applying at and know which cuisines you want to learn first. Back of house is so volatile and pay is so poor to average that you'll move up quickly if you stay the course. If someone else is footing the bill and you don't have to pay it back, good for you -- go ahead. But I used to work as a cook and am constantly surrounded by culinary professionals who regret schooling and struggle to pay it back on a cook's wages.

From what I understand, many high end restaurants and patissere won't even consider someone without professional culinary training too. Fair point about the debt load, that is significant and something to be weighed up.
Seems like best of both worlds might be a bit of both, part time study and working in a kitchen alongside that. Whether that is viable I have no idea

@@micah1754 In the kitchen world, cooking school is seen as a path rich kids take, or those hoping to hop the line. Some misguided souls think they can get hired as chefs upon graduation. The skills translate, but none of the cadence or culture of the job does. You still start at the bottom of the bottom, as a prep or line cook at an inconsequential station, making pennies paying off debt. Even worse for you if you're subsidized by your parents once you're in the work force.
What I'm telling them is that they can get straight to cooking without all of that debt. 6mos at a good restaurant, starting with prep work. Then go work at a great one. Or a a world class one.
